I've never cooked pork before so I don't know what to look for.

Best is to use a meat thermometer, otherwise the old fashioned way is the juice should run clear to brown, never red/pink

I have talked with Pork Producers at county fairs and the state fair, and they ALL say pork is fine to serve when it's a little pink inside. It's more juicy, won't be dry.
Pork chops in a 300 degree oven for about a half hour to 40 minutes should be fine.

Yes, if the juice runs clear, it's cooked, same thing goes with portury.
However, I like my pork chop well done, so I cook it until no juice coming out.

p.s; ginger makes good flavor out of pork.

They should be cooked to an internal temperature of 160°F (70°C). When done, the internal color changes to white with traces of pink in the center. To prepare for cooking, trim visible fat from the chops. Pork chops can be broiled, sautéed, grilled, braised, or baked.

I'm so sorry that you're going through this. Could it be that he thinks that you don't want to associate with him? If that's the case simply approach him and try to initiate contact. I've seen in some people released from prison that they want to spare their family members who they think might be "too good" for them, and they avoid contact completely. I had a friend who's father faked his own death to keep from hurting her by being in her life, though he was misguided. If you're worried about approaching him immediately, your other family members could be a good source of information about your father's state of mind. Alternately you could try writing him a letter expressing your feelings and letting him know basically what you wrote here. Be prepared for anything, sometimes people coming out of prison often develop odd habits and ideas from the time locked up.

PORTUGUESE PORK CHOPS

Porco de Vinha de Alhos - Portuguese Pork Chops

Rub pork chops well with ground cumin (crush seeds in a mortar and pestle for best flavor).

Place pork chops into a glass, ceramic or stainless steel ovenproof container. Combine 1/4 cup white sugar, 1 pint cider vinegar and two tablespoons salt.

To this mixture, add 1/2 cup (4 ounces) whole mixed pickling spices and one quart wine vinegar. Peel, smash and mince 4 cloves garlic; add to marinade. Cover tightly and place in refrigerator to marinate for 2 days. Turn pork chops to coat evenly each day.

Bake in a preheated 350'f oven for 40-45 minutes or until done.

Note: If you won't be cooking these in the oven (for example, you might want to grill them outside instead) save the dish and use a Ziploc bag to marinate the chops.

old wives tale but is usually the case, see if the juices run clear when you stab with a fork in the meat, if the juices run clear, then its cooked thoroughly
