Chicken Noodle Soup
Yield: 8 Servings
Ingredients
3 lb chicken pieces
6 c hot water, divided
2 lg stalks celery, thin slice
1 c med carrots, thin sliced
1/2 ts dried basil
1/4 ts rosemary
1/4 ts pepper
1 ts salt, (opt.)
1/2 c thin egg noodles
Instructions
In a 5-qt casserole combine chicken, 4 cups hot water, celery,
carrots, basil, rosemary, pepper and salt. Microwave at High 30-40
minutes, or until chicken falls easily from the bone, stirring twice
during cooking.
Remove chicken from the bones. Discard bones and skin. Dice meat and
return to caserole. Add 2 cups hot water and noodles. Cover.
Microwave at High 8-10 minutes, or until water boils. Then, Microwave
at High 7-10 minutes, or until noodles are tender.

In a large pot sautee finely chopped onion, celery and carrots until they are slightly tender.
Add a bag of thawed chicken tenders and sautee until the chicken starts to turn color and sweats a little. Add a tablespoon each of sage, parsely, thyme and rosemary (yeah, like the old song), salt, pepper and garlic powder. Stir the herbs and the chicken for a minute and then cover the chicken with a large can (or two) of chicken stock. Bring to a boil and add noodles. Simmer until done.

It is soooooooo easy to make !!!
2 cup water
1 T. chicken bouillon or soup base
1 onion chopped
one hand full of pasta...any kind you desire
Boil this till pasta is ALMOST done to your likeness. Chop up a skinless, boneless chicken breast and add at this time and simmer for 5 minutes till your pasta is done. Sprinkle in some frozen peas and dig in !!
Taste and adjust your salt and pepper flavor if needed. Want more chicken flavor, then add more bouillon

Chicken Soup with Garlic, Saffron, and Tomatoes:
8 black peppercorns
5 parsley sprigs
2 thyme sprigs
1 garlic clove, crushed
6 cups White Chicken Stock
2 cups chopped leek (about 2 large)
1 1/2 cups chopped fennel bulb
1 1/2 cups sliced mushrooms
1 cup chopped peeled turnip
1/2 cup chopped carrot
1/2 teaspoon saffron threads
1 1/2 cups chopped seeded peeled tomato (about 5 medium)
1 pound skinless, boneless chicken thighs
1 cup thinly sliced spinach
1 teaspoon salt
1 teaspoon black pepper
1 (19-ounce) can cannellini beans, rinsed and drained
1 garlic clove, halved
12 (1/2-inch-thick) slices French bread baguette, toasted
Place first 4 ingredients on a double layer of cheesecloth. Gather edges of cheesecloth together; tie securely. Combine cheesecloth bag, stock, and next 6 ingredients (stock through saffron) in a large Dutch oven; bring to a boil. Reduce heat; simmer 10 minutes. Add tomato and chicken; simmer 20 minutes.
Remove cheesecloth bag and chicken; discard cheesecloth bag. Cool chicken slightly, and chop. Add chicken, spinach, salt, pepper, and beans to broth mixture, and cook 2 minutes.
Rub cut sides of garlic halves over one side of each bread slice, and discard garlic. Place 2 bread slices in each of 6 bowls; ladle 1 2/3 cups soup over each serving.
Yield: 6 servings
