Chicken taco filling. Easy and delicious!
1 lb. boneless chicken breasts
1 can chicken broth
1 taco seasoning mix

Put in a crock pot on low overnight (or at least 8 hours). Turn off heat and use a fork to shred meat. It falls apart. You can use this for tacos, enchiladas, empanadas, etc.

You Pillsbury Grands for empanadas. Separate each round into 2 or 3. Put one teaspoon of meat in each and fold in half. Pinch corners with fork and bake at 350 for 15 mins.

Chicken Chili Verde Tacos:

3 cups prepared shredded cabbage
1 cup lightly packed fresh cilantro
1 cup green-chili salsa
1 pound boneless, skinless chicken breasts
1 teaspoon salad oil
1 onion (1/2 lb.), slivered lengthwise
3 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon dried oregano
8 reduced-fat or regular flour tortillas (7 to 8 in.)

1. Combine cabbage, cilantro, and salsa in a serving dish; set aside.

2. Cut chicken crosswise into 1/2-inch-wide strips. In a 10- to 12-inch nonstick frying pan over medium-high heat, stir oil, onion, and garlic for 2 minutes. Increase heat to high, add chicken, and stir often until meat is no longer pink in center, 4 to 6 minutes. Add cumin and oregano; stir for 15 seconds. Spoon into a serving dish.

3. Wrap tortillas in a cloth towel and cook in a microwave oven on full power (100 percent) until hot, about 1 1/2 minutes. At the table, spoon the cabbage and chicken mixtures into the tortillas.

Yield: Makes 4 servings

Tacos

Ingredients

(12 servings)

1 lb Ground beef
1/3 c Chopped onion
2 tb Finely chopped black olives
1 ts Ground cumin
1/2 ts Salt
1/4 ts Garlic powder
1/8 ts Pepper
12 Taco shells
1/2 c Seeded, chopped tomato


Instructions

TOPPINGS: Guacamole chopped green onion grated cheddar cheese shredded lettuce
Preheat grill for 10 minutes. In large cast iron skillet or frill safe baking dish, combine ground beef and onion. Cook and stir at high with hood open until beef is no longer pink, 10-12 minutes. Drain. Stir in olives, cumin, salt, garlic powder and pepper. Place taco shells on upper cooking rack. Cook meat mixture with hood closed for about 5 minutes longer. Stir in tomato. Reduce heat setting to low and serve from grill with toppings. Makes 12 taco's

Try using ground turkey instead of the beef or black beans mashed a little bit. Oh, and I "fry" my tortillas in a little oil, either the flour or the corn, whatever your taste is. It is really delicious!

tequila, beer, ground cumin, soy sauce, lime juice, and salt. Use the old little this, little a'that, and make that humming noise that the fat bald guy did on the three stooges.
