I am looking for something easy, cheap and unique. I have a tasty chicken pot pie recipe willing to swap for something more upbeat. I have a cookbook that is too fancy and has stuff I will never make. I need something down to earth and delicious. Thanks and God Bless.

Dear girl you should check the site below... This guy tries to make things quite simple. I've never been disappointed. Look for an asparagus-almond recipe.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.



Garlic Chicken Breasts with Brown Sugar
This is so easy and very good!
Tbs oil
6 or more garlic cloves, minced
1 Tbs brown sugar
3 boneless skinless chicken breasts

Preheat the oven to 500F.

Heat the oil over medium heat, add the minced garlic and cook slowly, stirring constantly, until softened. Make sure the oil is not too hot. You don't want to brown the garlic and it can get to that point quickly if you're not careful.

Take it off the heat after 5 minutes or so and add the brown sugar and stir it in.

Line a shallow roasting pan with foil and spread oil across the foil. Lay your boneless skinless chicken breasts across it, spread the garlic/oil/brown sugar mix across the chicken. Bake for 15 minutes, or until done.

Quick Beef Chili
Ingredients:
2 teaspoons oil
1 pound lean ground beef
1 large chopped onion
1 clove garlic, minced
1 large can tomatoes, (28 ounces)
1 can (15 ounces) small red beans, with liquid
1 teaspoon ground cumin
2 teaspoons chili powder
1/2 teaspoon salt
1/8 teaspoon pepper

Preparation: In a large saucepan or wide pot brown ground beef with onions in hot oil; then add garlic. Drain off excess fat. Add remaining ingredients; bring to a simmer. Cover and simmer over low heat for 1 1/2 to 2 hours.

I don't eat chciken pot pie but I wanted to share this recipe iwth you...It is easy and healthy...

Marinade chicken breast in crushed ginger for about 1/2 hour. Sear the chicken in a frying pan just enough to get either side brown, put the entire pot in the oven preheated at 350 for about 20 mins.

Cook Couscous according the package. Layer it with Arugula and then with Chciken peas. Squeeze lemon juice over the couscous, chick peas and arugula....

MMMM....Yummy!!!! Let me know how it turns out if you make it.

All Day Pork Chops

Ingredients :

For crock pot or oven preparation
4xthick pork chops (we prefer the sirloin chops for this recipe)
3/4cupwhite wine
1xonion chopped
clove garlic crushed (optional)
1x(26 oz.) Family size can of Cream of Mushroom soup

Method :

* Basic recipe: Spray a frying pan with nonstick spray. Saute` chops and onions (garlic) till brown and onions are soft. Add 3/4 cup white cooking wine and half the can of soup and heat thru.
* To prepare in a crock pot, spray with no-stickum, and spread half of the soup in a casserole dish or the bottom of your crock pot. Add chops and pour the rest of the mixture on top. cook on high for 3 to 4 hours, or on low all day.
* To prepare in the oven, cover and bake at 325* for 3 hrs or 250* for 4 hrs.
* Use the soup as gravy over rice or mashed potatoes.

Spiced pork chops and peaches

2 TB brown sugar
2 TB orange juice
2 TB soy sauce
salt, pepper, curry, if want
4 boneless pork chops olive oil to brown the chops in
3 large peaches, sliced
Put all ingred in bowl listed above chops. Mix and then put chops in bowl and cover both sides. Let marinate for 1//2 hour. Heat oil, brown chops, (reserving marinade) cook until done, remove chops and keep warm. Then add peaches to sauce and then into the pan adding more orange juice, if desired.Simmer until liquid is reduced.

To serve pour sauce over chops and serve with brown rice, a good tossed green salad or mixed veggies.

Have you tasted enchiladas ?

3 cups of water
4 or 5 red dry chilies (mild or medium up to you)
1 tpsb flour
2 or 3 garlic cloves
12 corn flour tortillas
1/4 cup veg or canola oil
cooked chicken(could roasted from store) or shredded beef
2 teaspoons salt
2 cups shredded monterrey jack cheese
lettuce

Take seeds and stems of chilis
Boil chilis in 3 cups of water until chilis are soft
put in blender, add salt, pepper & cilantro and blend
meanwhile in a sauce pan over low to med heat add oil and garlic
cook until garlic is toasted, take out and add flour to oil
toast flour until light brown.
Add chili mix to flour and stir until thickens a bit
Take baking dish 15 x 10 x 2 or so
put shredded beef or chicken on edge of tortilla and roll
do this to all 12.
put side by side in dish
pour mix on top add cheese on top
put in micro 10 minutes
ready to serve. Add shredded lettuce on top.

Can have spanish rice and/or beans as side(s)

For each soup bowl:
break in 1 pkg. Top Ramen (or other brand) & seas. packet
add chopped garlic (jar) to taste
pinch of red pepper flakes
handful of chopped cooked chicken
1-1/2 cups water

Microwave on HIGH 5 minutes. Sprinkle with chopped scallions and serve.

dessert-this is so good, and i take it with me when i have to cook something for a party or whatever:

chocolate eclair dessert:

you will need:
1. chocolate icing...brand name does not matter.
2. graham crackers
3. pudding...i get the big can of vanilla from SAM';s
4. whipped topping...in a tub
5. a plastic container with a lid (9 x 11 or so)
6. wax paper

what to do:
1. take the graham crackers and layer them in the bottom of the
plastic container.
2, in a bowl, fold the whipped topping into the vanilla topping carefully until it is mixxed.
3. put a layer of pudding mix on top of the graham crackers.
4. put another layer of graham crackers
5. keep layering them until the container is almost full.
6. put the chocolate icing in the microwave and microwave approx 15-10 secs. take out and stir, put back into microwave and zap another 15-20 secs and stir...keep repeating until melted and liquid.
7. pour ontop of pudding/graham cracker mix.
8. put wax paper on top of it and put it in the fridge.
9. take it out after about an hour and serve.
