Aztec Calendar (Taco Salad)
Yield: 1 Serving
Ingredients
1 lb ground beef
2 tb chili powder
1 ts ground cumin
3/4 ts salt
1 avocado; cut in 1/2" cubes
2 tb lemon juice
4 c finely shredded lettuce
1 1/2 c finely sliced green onions
1 1/2 c shredded cheddar cheese;
-sharp
1 c cherry tomatoes; quartered
Dressing:
14 oz taco sauce
1/4 c chopped green chilies
2 tb salad oil
1/2 ts grund cumin
2 c tortilla chips
1/2 c sour cream
Instructions
Salad: in a medium skillet cook beef until brown, stirring to break up
meat. Drain off drippins and stir in chili powder, cumin and 1/2 teaspoon
salt. Cook over low heat, stirring 3 minutes. Col. Place avocado in bowl.
sprinkle with lemon juice and remaining 1/4 teaspoon salt. Prepare
remaining ingredients for salad, set aside. in smal bowl combine all
ingredients for dressing.
to serve arrange in concentrice circles, lettuce green onion meat cheese,
avocado and tomaows. Sprinkle chips on top of salad. Serve immedialtely
with dressing and a dollop of sour cream. Makes 6 servings.

What ingredients have you got to hand??? Hard to make steak and fried potatoes without either (1) steak and (2) potatoes! On the other hand, so long as you've got flour, eggs and milk, you could make pancakes and then it all depends what else you've got. If you have veggies, prepare them and layer them with the pancake and maybe tomato puree if you have some, grate some cheese over it all and stick it in the oven for ten minutes and you have a galette. Or put a roasting dish into the oven for a few minutes with some butter or fat in it for the fat to get very hot, then pour in the raw pancake mixture and bake it, to get Yorkshire pudding. Put some cooked sausages in with the batter and you have "toad in the hole" which is filling and delicious even if it does have a silly name.
Or just eat the pancakes with syrup or sugar or whatever you have to hand.
Or if you have no flour, make omelettes - add some herbs or mushrooms or cheese or something if you have it.
If you have no eggs... nope, I'm fresh out of inspiration!

20-Minute Peking Duck:
2 teaspoons dark sesame oil
2 (8-ounce) packages boneless duck breast halves, thawed and skinned
1/3 cup hoisin sauce
1/2 teaspoon grated orange rind
2 tablespoons orange juice
2 teaspoons Sriracha (hot chile sauce, such as Huy Fong)
4 (6-inch) flour tortillas
1/2 cucumber, peeled, halved lengthwise, seeded, and cut lengthwise into 8 strips
2 green onion tops, cut into thin strips
2 teaspoons sesame seeds
Heat oil in a large nonstick skillet over medium-high heat. Add duck to pan; cook 2 minutes on each side. Reduce heat to medium; cover and cook an additional 3 minutes on each side or until done. Cut duck diagonally across grain into thin slices.
Combine hoisin, orange rind, orange juice, and Sriracha. Heat tortillas according to package directions. Spread about 2 tablespoons hoisin mixture down center of each tortilla. Top each tortilla with 1/4 of duck, 2 cucumber strips, 1/4 of onions, and 1/2 teaspoon sesame seeds; roll up.
Yield: 4 servings (serving size: 1 filled tortilla)

***chicken breast, saute in olive oils, some onions, peppers ans mushrooms, then add some capers, white wine and lemon juice, after is cooked turn off stove and add some tarragon, parsley or basil. Served with some wihte rice or mashed potatoes and some saute or broiled veggies, (ptatoes, carrots, squash, zuchinni etc.)

Hungarian Stuffed Peppers

Ingredients :
1medonion
2lbripe tomatoes, peeled if desired, and diced
Or:
2x14 1/2-ounce cans diced tomatoes with their juice
2tbltomato paste
1/2cupwater
1xbay leaf (optional)
Salt and freshly ground pepper, to taste
2/3cuplong-grain rice, rinsed and drained
1slcchallah or white bread, day-old or stale
1/2lbground beef
1/4cupchopped fresh parsley
1tsppaprika (optional)
4xor 5 green bell peppers
2tblbrown sugar, or to taste
2tblstrained fresh lemon juice, or to taste
Method :
* Slice half the onion and put it in a stew pan. Add tomatoes, tomato paste, water, bay leaf and a pinch of salt and pepper. Mix well and bring to a boil. Cover and cook over low heat for 15 minutes. Boil rice in a saucepan with two cups boiling salted water for 10 minutes. Rinse with cold water and drain well. Soak bread in cold water and squeeze dry. Put in a bowl.
* Coarsely grate remaining onion half and add to bowl. Add beef, parsley, paprika, one-half teaspoon salt and one-quarter to one-half teaspoon pepper and mix well. Add rice and mix again. Cut a slice off top (stem end) of each pepper. Reserve slice; remove stem, core and seeds from each pepper. Spoon stuffing into whole peppers and cover with reserved slices.
* Stand them up in tomato sauce. Cover and simmer, adding boiling water from time to time if sauce becomes too thick. Cook 45 minutes to one hour, or until peppers are very tender. Gently remove peppers. Discard bay leaf. If the sauce is too thin, cook it, uncovered, over medium-high heat, stirring often, until thickened. Add sugar and simmer for one minute. Add lemon juice. Adjust seasoning. Serve peppers hot, with sauce.
