Amish Meatloaf

2 pounds ground beef
2 1/2 cups crushed butter-flavored crackers
1 small onion, chopped
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
2 slices bacon

1 cup ketchup
2 tablespoons vinegar
3/4 teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
1/2 cup brown sugar

DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

Cheeseburger Meat Loaf:

1 pound lean ground beef
3/4 cup uncooked regular oats
1/2 cup milk
2 tablespoons minced onion
1 large egg
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon garlic salt
1/4 teaspoon pepper
1 (12-ounce) bottle chili sauce
3 packaged Cheddar cheese slices, cut into 1-inch strips

Stir together first 10 ingredients in a large bowl just until combined. Place in a 9- x 5-inch loafpan.

Bake at 350° for 40 to 45 minutes. Pour chili sauce over meat loaf, and bake 20 to 25 more minutes or until meat is no longer pink in center.

Arrange cheese slices in a crisscross pattern on top of meat loaf. Let stand 10 minutes before slicing.

Yield: Makes 4 servings

Weellll - This is the way my mom and I make it.

Preheat your oven to 360 deg.

Take 2 pounds of fresh ground round. (damn, that rhymes!)
Finely chop a small - med red onion.
Mix them together in a good sized bowl. Use your hands - this works best.
Then crack 2 large eggs into the meat mixture. Then crush up about 1/2 tube of Saltines quite fine. Mix the Saltines and the egg together with the meat and onion. Knead them together. If the mixture is too moist and doesn't hold together, crush in a few more Saltines till it does. Knead till you have a meat loaf looking object in bowl.
Pat it evenly into a 9x13 pan. Sprinkle the top with pepper, fresh ground if you have it, and a little salt. You don't need a lot of salt because of the Saltines. Drizzle the top all over with ketchup.

Bake for about 1 hr 15 min or till the top is brown and the center is no longer pink. Don't be alarmed if it pulls away from the edges of the pan. Serve with mashed potatoes and peas.

This meat loaf is an old-fashioned favorite, made with lean ground beef, chili sauce, oats, and other ingredients and seasonings.

INGREDIENTS:

1 tablespoon vegetable oil
2 ribs celery, chopped
1/2 cup chopped onion
1 1/2 pounds lean ground beef or 1 pound lean
ground beef and 1/2 pound ground pork
3/4 cup oats, quick or old-fashioned
1/4 cup chili sauce or ketchup
1 tablespoon Worcestershire sauce
1 1/2 teaspoon salt
1 large egg, beaten
3 tablespoons water or milk

PREPARATION:

Heat oil in a large skillet over medium heat. Add chopped celery and onion; cook, stirring, until tender, about 7 to 9 minutes.
In a large bowl, mix ground beef or beef and pork mixture, oats, chili sauce or ketchup, Worcestershire sauce, salt, beaten egg, celery and onion mixture, and the water or milk.

Shape meat mixture into a 9x5-inch loaf. Bake at 375° for 1 hour. Using 2 spatulas, carefully move meat loaf to a serving plate and slice.

Serves 6 to 8.

All recipes above are great--the only difference I do is add half the meat mixture to the pan, pat it down and cover it with sliced american cheese then add the other half of the meat mixture, pat it down and then kinda crimp the edges to seal the cheese in. When you slice the meatloaf you get some cheese with it..I have heard some people put hard boiled eggs in the middle of the loaf??

for how many people, ground beef ,bread crumbs 1 cup. per 5 lbs. 2 large eggs,1/2 packet of french onion dry soup mix..1/4 cup of milk.1/2 diced green pepper.pepper small amount..mix well. put in to a loaf pan ,lift pan about 5 inches from counter and drop it on to the counter,about 3 or 4 times, then shape it in to pan , cover with tin foil.bake at 325,for about 1hour and 45 minutes.remove drain off fat,put back in oven and brown for 15 minutes,,

2lbs ground beef
2 cups bread crumbs or cracker crumbs
1 small onion chopped fine
1 tsp salt
1/2 tsp pepper
1clove garlic chopped fine
1 egg
3 tbsp Ketchup
Mix all ingredients except ketchup, and press firmly into a loaf pan, spread ketchup over the top and bake for 45 - 60 minutes.
