I used to work in a pizzaria in Buffalo - we deep fried the wings at 350 until they floated AND were crispy. Usually took 10-15 min.

They will cook very fast. It depends on the temp of the oil, and the amount of wings. When they brown crisp they are usually done if the temp isn't too hot. That is only true of the wing portion. The other parts must be cooked longer even if deep fried. You can always pull one out from the deep fryer, cut in to it and if no pink, it is done. Best of luck.

i like them extra crispy fried i find that they hold the sauce better, just my opinion
