Bacon Wrapped Asparagus
These bundles can be easily prepared on outdoor grill or in a hot oven.
1 1/2 pounds asparagus spears, trimmed 4 to 5 inches long tips
Extra-virgin olive oil, for drizzling
A few grinds black pepper
4 slices center cut bacon or pancetta
Chopped chives or scallions, optional garnish
Preheat oven, if using, to 400 degrees F.
Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

Whether boiling or steaming, it is a good idea to tie the asparagus in bundles of 10-12 spears for cooking, so they can be quickly removed from the water all at once.
To boil: submerge in a large pan of boiling water, cover and cook for 3-6 minutes.
To steam: stand the asparagus in 3 inches of boiling water, cover and cook for 3-6 minutes.
To roast: pre-heat the oven (220°C, gas mark 7), place asparagus on baking sheet and drizzle over a little olive oil. Roast for approximately 10 minutes, turning a few times depending on the thickness of the spears. Stems should be soft, not limp, tips should be slightly crunchy.

Microwave. Place asparagus on a dish, in a circle, with the pointed ends facing toward the middle, cover loosely.
Cook on high for about two to three minutes, depending upon the size of the asparagus. They come out crisp and tender. So easy!

The best way to do them is blanch then for 2 minutes in boiling water and salt then saute in butter, olive oil or bacon fat, for a couple minutes and your good to go. Another idea is blanch then and then make a bundle of 3 wrap in some bacon and broil until bacon is crispy, you can serve this with bechamel or hollandaise sauce on top.

I love to cook it on the grill. I put it in aluminum foil, I put butter, balsamic vineger, pepper, minced garlic and salt on it, seal the foil and throw on the grill for about 15-20, until it's fork tender. You can also do this in the oven, just use a baking dish. It comes out so yummy, it's also good the next day cold.

When I steam asparagus I put it in a large skillet, lay it flat add just a little water and cook until bright green. A little butter and salt and pepper....yum.

I steam mine in the steamer tray on top of a pot of boiling water. Then whip up a hollandaise sauce. I so love that dish.

My fav way is to put it on a cookie sheet, sprinkle it with olive oil and kosher salt and bake it at 400 deg. for about 20 minutes.
