In terms of resources a lot has been written on the life of Ansel Adams. In fact I studied with his long time photo assistant David Bayles who you can contact through http://www.davidbayles.com if you want to get first hand experience as to why Ansel was a person.
As much as I like Adams though I think Diane Arbus is a far more interesting and controversial person to write on. There is an almost equal amount of material which is available out there about her life and her work.
Other notable Photographers who you should also consider are
Edward Weston as well as Brett Weston, Joel Peter Witkin, Ej Bellocq, Imogen Cunningham as well as all the members of the F64 group. If you are more interested in the early days of photography look at Henry Fox Talbot, Henry Jackson(whose work helped establish the US park system), Matthew Brady(civil war photographer), Louis Daguerre (inventor of the first practical photo process).
Really there are so many interesting characters in photo history so whatever you write on should be interesting.

Lee Miller an ex New York Model turned photographer in the 1930's/40's. Her World War 2 photos are harrowing. Her photographs will give you plenty to write about.

Try Cindy Sherman, fantastic self portraits and give so much to write about plus there are no end of images on the web.
Why not take this project one step further and replicate some of the work? Not only will this show that you have gone further than your classmates but you will learn so much with composition and exposure.
