Does anyone have a good recipe for a cream cheese cupcake?

CREAM CHEESE CUPCAKES

Paper cupcake liners
3/4 c. graham cracker crumbs
2 tbsp. melted butter
3 (8 oz.) pkgs. cream cheese, softened
1 tsp. sugar
1 1/2 tsp. vanilla
3/4 c. sugar
3 eggs
1 (20 oz.) can cherry, blueberry or pineapple pie filling

Place liners in muffin tins. Mix graham crackers and 1 teaspoon sugar and butter. Place in 1/2 teaspoon of mixture in each liner. Pat down. Mix or blend cream cheese, vanilla, 3/4 cup sugar and eggs, until very smooth. Pour on top of crumbs, filling about half full.
Bake 20-25 minutes at 325 degrees or until lightly browned. When cool, top with pie filling of your choice. Makes 18 cupcakes.


CHOCOLATE CREAM CHEESE CUPCAKES

3 c. flour
2 c. sugar
1/2 c. cocoa
2 tsp. soda
1 tsp. salt
2/3 c. vegetable oil
2 c. water
2 tbsp. vinegar
2 tsp. vanilla

FILLING:

8 oz. cream cheese
1/2 c. sugar
1 egg
1 (6 oz.) pkg. chocolate chips

Mix batter and fill cupcakes half full. Drop 1/3 tablespoon filling in middle. Bake at 350 degrees for 15 minutes.

Cream Cheese Cupcakes
Yield: 18 Servings

Ingredients

2 pk cream cheese (8 oz each)
3/4 c sugar
3 ea eggs, separated
18 ea vanilla wafers
FROSTING
8 oz light sour cream
1/2 c sugar
1 ts vanilla

Instructions

Cream the cheese and 3/4 cup sugar. Add egg yolks, one at a time.
Whip egg whites until soft peaks form. Slowly fold the whites and
cheese mixture together. Place a wafer in each of 18 paper cups in
muffin tins. Spoon mixture into cups and back at 350 F for 30
minutes. While cupcakes are baking, in a shallow pan stir together
sour cream, 1/2 cup sugar and vanilla. When cupcakes have finished
baking, increase oven to 400 F and bake frosting for 5 minutes; stir
and bake 5 minutes longer. Cool both cakes and frosting. When cool,
frost cakes and refrigerate.

CREAM CHEESE CUPCAKE RECIPE

Ingredients:
1 (3-oz.) pkg. Cream Cheese, softened
1 package Yellow Cake Mix
1 1/4 cup Water
1/2 cup Butter, melted
3 Eggs
Chocolate Frosting or flavor of your choosing


Directions:

In a mixing bowl, beat cream cheese until smooth. Add cake mix, water, butter and eggs; mix well. Spoon batter by 1/4 cupfuls into paper-lined muffin cups. Bake at 350 degrees for 25 minutes or until golden brown. Remove to wire rack to cool completely. Frost.

Chocolate-Cream Cheese Cupcakes:

Dollop cupcakes with whipped topping, and add your favorite sprinkles.

1 (18.25-ounce) package Swiss chocolate cake mix
1 (8-ounce) package cream cheese, softened
1/3 cup sugar
1 large egg
1 cup (6 ounces) semisweet chocolate morsels

Prepare cake mix according to package directions. Spoon batter into paper-lined muffin pans, filling two-thirds full.

Beat cream cheese and sugar at medium speed with an electric mixer until fluffy. Add egg, beating well; stir in chocolate morsels. Spoon 1 heaping teaspoon cream cheese mixture into center of batter.

Bake at 350° for 25 minutes. Remove from pans, and cool on wire racks. Store in refrigerator.

Yield: Makes 2 1/2 dozen

Ive made cream cheese frosting for my cupcakes. All it takes is cream cheese
confectionary sugar (10x)
vanilla extract

Mix these ingredients together (to taste) and spread on top of the cupcakes (homemade is best). DELICIOUS!!
