ooo....I feel your pain...my mom and younger sister are gluten intolerant so not only is wheat out of the question, but oats and several other grains!!

I'm at work but can update this with more recipes when I get home!!!.....

Here are some links I've found while at work.....

http://www.glutenfree.com/recipes.htm
(has a free Adobe cookbook download)

http://gfkitchen.server101.com/recipes.htm
(site with free gluten-free recipes sorted by category!)

http://www.csaceliacs.org/recipes.php
(more recipes and tips for adapting existing recipes)

Good luck and I'll try to post you some 'tried and true' recipes!! HOW WONDERFUL of a friend you are for trying to learn how to cook for others with such a difficult allergy!!

I can help there. My father-in-law has celiac and, while I haven't been tested and diagnosed, wheat makes me sick.

Two really good websites www.glutenfreepantry.com and www.glutenfreemall.com They sell lots of gluten free products in all categories and you may find good recipes through them as well.

Believe it or not check out paleo diets. They have a lot of recipes that are wheat free. I've learned to make the best Walnut Cinnamon cookes that have no flour in them whatsoever.

Also plug in celiac as a search term and I'm sure you'll come up with lots more.

Have you looked at recipes that use/include rice? Or are they allergic to that also?

A quick online search brought back:
http://www.glutenfree.com/recipes.html
http://www.csaceliacs.org/recipes.php
http://www.glutenfreekitchen.org/recipes.htm
http://www.gfutah.org/recipes.htm

You might be able to find something on these pages. Good Luck!
