There are lots that use vinegar, buttermilk or other non-creamy dressing instead. Look at www.allrecipes.com and search for 'cole slaw' or just 'slaw'.
This one got very high reviews:
Amish Coleslaw
1 medium head cabbage, cored and shredded
1 medium onion, finely chopped
1 cup white sugar
1 cup vinegar
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon white sugar
1 teaspoon prepared mustard
3/4 cup vegetable oil
In a large bowl, toss together the cabbage, onion, and 1 cup sugar. In a small saucepan, combine the vinegar, salt, celery seed, 1 teaspoon white sugar, mustard and oil. Bring to a boil, and cook for 3 minutes. Cool completely, then pour over cabbage mixture, and toss to coat. Refrigerate overnight for best flavor.

Yes there is one where you can use a rice wine vinegar with a bit of sugar instead of Mayo, you put all the same ingrediants as you would if you were making it with Mayo, but I think you can ccombine like a cup tp half acup of rice wine vinegar and like a quarter cut of sugar with a squeeze of lemon. You can also check out the foodnetwork.com site. I am sure there are plenty of non mayo cole slaw recipes there. I hope it turns out well for you.

I have a simple and unusual cole slaw recipe that doesn't require mayo.
1lb. package of coleslaw
1 pkg. chicken flavored ramon noodles- uncooked (spelling?) broken into small pieces
4 green onions
1/2 cup toasted almonds
1/2 cup of sunflower seeds
Dressing:
1/2 c. veg. oil
flavor packet from pkg. of noodles
3 Tbls. vinegar
3 Tbls. sugar
1/8 tsp. salt
1/8 tsp. pepper
Mix dressing ingredients together. Mix salad ingredients together
Add dressing to salad just before serving. If you add too early it will be soggy, so if you're taking the salad to a party or something, bring the dressing in a separate bowl and mix before you set it out.
This is really good slaw, the crunch from the noodles and sunflowers make for a very interesting and unexpected salad.

Here's a sub for Mayo in any recipe I liked it.
MAYO-NOT
Mayonnaise it is NOT! But it is a wonderful dairy-free, cholesterol-free, low-calories substitute that works well in recipes calling for mayonnaise. It is NOT good as a substitute spread on bread because the oil content is so low, but it is a good dairy-free base for sauces calling for sour cream or cottage cheese and it is of great value to people on nondairy diets.
1/2 lb. tofu, cubed (1 c.)
1 tbsp. canola or corn oil
1 tbsp. freshly squeezed lemon juice
1/2 tsp. salt
Place ingredients in blender and blend until smooth. Refrigerate in tightly covered container. It will keep 1 week. Makes 1 cup.
1/4 cup contains approximately 75 total calories, 54 calories in fat, 0 milligrams cholesterol, 300 milligrams sodium, 60 milligrams calcium.

Here's one I found.....
CAROLINA COLE SLAW
1/2 cup distilled white vinegar
6 tablespoons sugar
6 tablespoons vegetable oil
2 1/2 teaspoons dry mustard
1 teaspoon celery seeds
1 medium cabbage (about 1 1/4 pounds), thinly sliced
1 large onion, thinly sliced
1 large green bell pepper, thinly sliced
Combine vinegar, sugar, oil, mustard and celery seeds in non-aluminum medium saucepan. Stir over medium heat until sugar dissolves and dressing comes to boil. Remove from heat. Season with salt and pepper. Cool completely.
Combine cabbage, onion and green pepper in large bowl. Add dressing; toss to coat. Cover; refrigerate until cold, tossing occasionally, at least 2 hours. (Can be made
1 day ahead. Cover; keep refrigerated.)
Serves 8.

Mexican Coleslaw
6 cups green cabbage, sliced very thinly
1 1/2 cups carrots, peeled and grated
1/2 cup cilantro, chopped
1/4 cup rice vinegar
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
Place cabbage and carrots in a colander; rinse throughly with cold water to crisp. Let drain for 5 minute.
Meanwhile, whish cilantro, vinegar, oil, and salt in a large bowl.
Add cabbage and carrots; toss well to coat.

Make Asian Slaw use rice wine vinegar, soy sauce and a little sesame oil( sesame oil is strong) add a little salt and white pepper to tase and a little organic sugar or honey to taste. top with toasted sesame seeds

go to the isle in the grocery store where the sauces "hot sauce and stuff" is and there is a red cole slaw sauce...it looks weird but i tried it this weekend and its really good - no mayo for me either! sorry i can't remember what its called...but it will either be with the hot sauces or the salad dressings!
