My Hubby's leavin for a while for the ARMY and I want to spoil him a little, so I bought crab legs to cook for dinner. What veggies are good to go with it? Anything else I should make to go along?

I like mine with a green salad, baked potatoe and french bread. If he is a big eater you should make a steak to go with the crab legs, because there not that filling.

Saffron Risotto

Ingredients:

1 onion (small, chopped)
1 good pinch saffron threads
5 oz. unsalted butter (chilled in small cubes)
1 qt. Chicken stock
1 cup white wine (that you would drink)
10 oz arborio rice
2 oz. grated Parmigiano-Reggiano
Salt & Pepper
Procedure:

Bring the stock to a boil in a deep pot and add the saffron. Sauté the onion and rice in a large pan. Add the wine and allow it to cook into the rice stirring constantly. Begin to ladle in the stock slowly allowing each ladle to be absorbed before adding the next. Stir gently as needed. When the rice is 3/4 cooked begin to add the butter slowly, allowing the rice to absorb it.

When the rice is cooked, but still nutty, allow the rice to rest and thicken to a consistency that will just hold on the plate. Add the Parmesan and season to taste. Serve on a warm plate. (Not hot or the rice will fall)



Mediterranean Roasted Vegetables

Makes 6 servings

Ingredients:

Mediterranean Sauce:

1/4 cup hazelnuts, toasted, skin removed
3 tablespoons butter, softened
2 tablespoons sun-dried tomatoes, packed in oil
2 tablespoons Kalamata olives
1 1/2 teaspoons lemon juice
1 clove garlic
1/2 teaspoon sage, ground
1/4 teaspoon salt

Roasted Vegetable:

1 1/2 cups (8 ounces) baby carrots, cut into 1/4-inch rounds
1 pound green beans, whole, topped and tailed
1 yellow bell pepper, seeded and thinly sliced lengthwise
1 red bell pepper, seeded and thinly sliced lengthwise
1 medium (8 ounces) sweet onion, thinly sliced
3 tablespoons vegetable oil
3/4 teaspoon black pepper, ground

Preparation:

Preheat oven to 450 degrees F. Line baking sheet with aluminum foil, forming 1-inch sides.

Pulse hazelnuts, butter, tomatoes, olives, lemon juice, garlic, sage and salt in food processor* until blended but still chunky, scraping frequently. Set aside.

Place vegetables on aluminum foil-lined baking sheet. Drizzle oil and sprinkle pepper evenly over vegetables.

Bake at 450 degrees F for 30 to 35 minutes, stirring every 5 minutes, until vegetables are tender and starting to brown. Place in serving dish and toss with Mediterranean Sauce until vegetables are coated. Sprinkle with additional chopped hazelnuts, if desired.

To make sauce without a food processor: Finely dice hazelnuts, sun-dried tomatoes and Kalamata olive. Mix with butter, lemon juice, garlic, sage and salt until blended

a nice fried steak !!!
as far as the veg's go anything thats not on the messhall menu for the next few months (jus kidding ) a good mix of babby-corn -peas-celery-small red potatos-bell-peppers and a jalapeno all boiled and soft in a pot -
make a dressing using honey,mustard ,lime-juice,paprika,and some-miracle whip in a blender !!
melt 2-sticks butter-in a pan with some lemon-grass for the leg's lots of lime is good for them too!!

Boil them, then butter them, with seasoning and bake it, it is good. I apologize about your husband. You can make any vegetables you like, if you want it to be special, think of YOUR own ideas.
