Beer was invented almost 10,000 years ago (8th Century BC), in Ancient Egypt and Mesopotamia. Since any natural materials containing carbohydrates can ferment, and thus produce alcohol, many cultures around the world independently invented beer.

The fermentation process is started when yeast bacteria converts sugars to alcohol. Yeast bacteria is present in the air, and therefore if you leave sugary water out for long enough and in the right conditions (with some acid like lemon juice) it might start to ferment.

One would suspect that the fermentation process was understood first by scholars, or monks. However, alcoholic beverages have probably existed as long as fruit and yeast.

Beer is malt extract plus hops usually. One would suspect that with the ingredients of beer, that a baker was probably the most likely suspect. Monks were bakers as well, and they could well get accredited with the understanding of process rather than the actual invention itself.

Who decided to use yeast in baking? Yeast used in baking is generally collected from the skin of grapes. (at least it is the same strain)

It would be too difficult to give one person credit for weak fizzy wine made with barley and hops.

Irish monks invented beer because wine was common at the time, the english made it very hard to import grapes and Ireland does not have the proper climate to grow grapes, however barley did grow well in Ireland so the monks used barley hops as a substitute therefore beer was born

Credit for the invention of beer is generally given to Abdul Al-hazred, an ancient Sumerian alchemist who lived in Ninevah in the 4th millennium BC. According to the story, he was actually trying to produce the world's first granola bar, but added too much water.

Women!!

There was a program on Biography not long ago, that traced the roots back to women that invented beer, by mistake, how most things great are invented. I searched through the Biography site, but turned up too many searches to keep looking for it. I did come across another site that is not as indepth as the biography was, but should intrigue you never the less.
Obviously with no documentation around BC it could have been anyone that invented it! I enjoy believing in the thought that it was WOMEN!!

probably some monks back in Europe. there was something called the "little ice age" which caused folks in Europe not to be able to make wine, and so they began making beer. that is also why it became so popular in the U.S., because the founding fathers came from a beer-making tradition, instead of a wine-making one. monasteries have a huge beer-making tradition. look into it.
