BBQ Southwestern Chicken Salad:
8 cups shredded lettuce
1/2 cup canned black beans, rinsed and drained
1/2 cup canned corn, drained
1/2 cup light ranch dressing
2 cups chopped cooked, boneless, skinless chicken breast
1/3 cup bottled BBQ sauce
2 cups thin jicama strips or carrots
Prep time: 10 minutes
Cooking time: about 3 minutes
1. Put lettuce, black beans, corn, and ranch dressing in a large serving bowl and toss.
2. In a small mixing bowl, stir together the chicken pieces and the BBQ sauce.
3. Serve salads individually, with about 2 cups of the lettuce mixture, topped with 1/2 cup of the chicken mixture and 1/2 cup of the jicama strips.
Yield: 4 servings

Bring a 2 quart pot of well-salted water to a rolling boil. Add the chicken to the boiling water, turn off the heat and cover the pot. Let the chicken pieces sit in the hot water for 15 minutes, then drain the water and chop the chicken pieces into smaller pieces for the salad. Method 1 Prep all of the salad ingredients and toss them together in a large bowl. 2 Prepare the chicken salad dressing in a separate smaller bowl. Mix together the mayonnaise, preserves, and lemon juice. Taste for the proper balance of sweetness and acidity. The salad dressing should not be too sweet nor too sour. Add more preserves or lemon juice until you have reached the balance you want. Add salt and pepper to taste. 3 Gently stir the dressing in with the chicken salad ingredients. A recipe for Chinese chicken salad made with shredded chicken and preserved ginger. The rice sticks are a nice touch but if unavailable, feel free to garnish the salad with chow mein noodles.
Serves 4 to 6
INGREDIENTS:
4 ounces rice sticks
4 chicken breasts
2 tablespoons light soy sauce
1 head lettuce, shredded
preserved red ginger, chopped
Sauce:
1/2 cup sesame oil
1/2 cup red wine vinegar
1/2 cup light soy sauce
2 scallions, chopped fine
1 teaspoon pepper oil (optional, see link to recipe in directions)
2 to 4 cups oil for deep frying
PREPARATION:
Deep-fry rice sticks quickly, a few at a time in very hot oil until they puff, about 1 second. Drain. Remove.
Rub chicken with soy sauce and sesame oil. Place in shallow pan. Roast 45 minutes in 350 degree oven.
When chicken is cool, discard skin and bones and break meat apart with hands into shreds. Do not cut.
Combine first 3 ingredients of sauce in serving bowl. Mix well. Add scallions, and the pepper oil if using(this will make the sauce spicy).
Add lettuce and chicken. Toss well. Arrange rice sticks on top. Garnish with preserved red ginger. Serve cold.
* If you like, add toasted sesame seeds and thin almonds to taste.

San Antonio Chicken Salad
Makes 4 servings
Ingredients:
2 large whole chicken breasts, split, boned and skinned
1/2 cup salsa
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup sour cream
2 tablespoons mayonnaise
1 ripe avocado
1 cup sliced celery
Bibb or leaf lettuce leaves
4 crisply cooked bacon slices, crumbled
Preparation:
Cut chicken into 1/2 inch cubes. Combine salsa, cumin and salt in 10-inch skillet. Cook chicken in salsa mixture, stirring frequently, until cooked through, about 4 minutes. Transfer contents of skillet to mixing bowl; cover and chill thoroughly.
To serve, combine chicken mixture, sour cream and mayonnaise. Mix well. Peel, seed and coarsely chop avocado. Add avocado and celery to chicken mixture. Mix lightly. Spoon onto lettuce-lined salad plates; sprinkle with bacon. Serve with additional salsa on the side.

I boil about 4-5 boneless skinless chicken breasts in water with salt, pepper, thyme, and a little seasoning salt, while that boils I chop 1 onion, 1 clove of garlic and about 3 stalks of celery add all to bowl. After chicken is cooked through let it cool and chop up, add to bowl then add 2 big spoonfuls of mayo and salad dressing and a little bit of ranch dressing, mix all together, then add some shredded cheese and a little parsley. I never measure so add the dressings to your liking. I hope you like this, everyone in my family loves it.

2 eggs
1 can of chicken
1 teaspoon of mayanise
Boil the eggs for 10 minutes and then cut them up . Then add your chicken and maynesise. It is real good

buy the bag rice and boil it for 10 minutes and the eggs ten minutes and then put the eggs in the rice and maynosies and you may put pickle relish if you like. this is real good especially for 2 people. hope you enjoy

Chicken salad with grapes
1 lb. chopped chicken breast (turkey works extremely well too)
1/4-1/2 cup mayo (reduced fat if you like)
3 ribs of celery, chopped
1 small red onion , chopped
1 large bunch of seedless red grapes , halved
salt and pepper to taste
1/4 tsp. of cayenne pepper
1 loaf of good, crusty french bread
In a large bowl combine all ingredients, except bread of course.
Serve on french bread.
I catered large functions for many years and this was one of my most requested menu items!

Here's what I use:
1 can Trader Joe's all white chicken meat
2 table-spoons (adjust to taste) curry powder
dash salt
mayonnaise to moisten
slivered almonds
chill, serve in iceberg lettuce cups or stuff in pita breads.
