It depends on how hot you cooked it and the thickness of the chicken piece.
If you cooked it at a high enough temperature then 16 minutes would probably be enough time for the chicken to cook all the way through. And if it wasn't pink it should have been fine.

if it wasn't pink, it was OK. Smalll pieces of chicken, like cut up breast only takes a few minutes to cook. The real problem is at the joints, especially between the leg and thigh, if you are worried, cut before cooking.

She shouldn't get sick if it appeared cooked. If she does get sick, onset of salmonella is 6-72 hours. I wouldn't worry. First of all, she almost certainly won't get sick, and even if she does she won't die, she'll just feel horrible, and vomit and have awful diarrhea for a day or so. Then it'll be over and she'll probably never have chicken again unless it's burnt to a crisp.
But like I said (and many other answerers), she won't get sick. The chicken was fine.

she's fine. It doesn't matter how long it was cooked, it matters how done it is, and yes, I mean stick a fork in it. If the chicken was not pink then nothing will happen. I think she knows what she was doing. It's really great that you care. God Bless!

CHicken cooks very quickly, if it wasn't pink then it was done. Food poisoning can take up to 24 hrs. to surface. My guess is she will be fine.
