One of the great mysteries of the pickle ailse! But wait, there's a simple explanation!

Black olives come in a can because they are actually cooked in the can. Olives go in, a brine is added, the cans are sealed and they then go into a cooker.

Green olives are pasteurized but not cooked, then put in jars with brine added. Since they aren't cooked, they can be put in glass jars (which would explode during cooking if used for black olives.)

Two reasons:
1) Green olives will react with the metal in the cans.
2) People tend to use lots of black olives at a time, but only a few green olives. Hence, Green olives are resealable.

The vinegar in the green olives chemically reacts to metal.

The acid in unripe olives (the vinegar used to keep them from spoiling) reacts with metals. The ripe olives are packed in water.

Green olives are cured. They won't change color in the short run.
Black olives are ripe. They will change color is exposed to light in the short run.

could it be that gren olives are cured in salt. and black olives are cooked in a metal can.
