take your fish of choice. clean it very well. get season salt, pepper, and any other seasons you like.lay the fish flat out on a cookie sheet. season one side, then flip it over to the other side and season it. next pour corn meal over the fish. move the fish around until it is completly coated in corn meal. place fish in a pan of hot vegetable oil. cook until golden brown.

Pan Fried or Sauteed Yellow Perch

Ingredients

(4 servings)

6 sm Yellow perch
7-9 " long
4 tb Bacon fat or lard
Salt and pepper
4 tb Butter
Cornmeal
1 Lemon (opt.)


Instructions

Dress, scale, and what the fish, pat dry, salt and pepper, then dredge them in the meal or meal-flour combination. Heat the fat until it is hot enough to cook at once, but not burning, sputtering hot. Lay in the fish, turn heat down to barely a medium flame, and begin to brown the fish. Keep the fish loose from the pan bottom with a thin metal spatula. Taking 8-10 minutes to a side (turn heat low if it seems to fry too fast), brown the fish slowly until crisp. Do not overcook. When the flesh is opaque the fish is done; one hopes it's all browned by then. Add 4 Tbs. butter to the skillet after removing the fish and squeeze in the juice of a lemon, stir the fat and juices to loosen the dredgings, and pour over the browned fish.
VARIATION: After removing the fish from the skillet, toss about 1/3 cup of chopped black walnuts. Brown lightly with the remaining butter and sprinkle over the fish before serving.

4 mackerels, slit lengthwise (or any sliced fish of your choice)
2 tablespoons coriander powder
1 tablespoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon salt
3 tablespoons vinegar (or equivalent lime juice)
1 tablespoon garlic paste
oil (for frying)

Mix all the above ingredients.
Add little water to make into a smooth paste.
Wash and dry the fish.
Apply the masala and marinate for 10 minutes.
Roll fish in dry wheat flour.
Shallow fry for 5 minutes on each side.
Drain on kitchen paper and serve with rice and dal.

I think it depends on the type of fish you are looking to fry. My husband and I love fish, we use a lot of tuna and tilapia, and the best recipe we've ever used it to mix together flour, season salt and garlic powder (mix to taste) then we add some chopped garlic to the egg wash, dip the filets in the egg wash, get them battered up and fry and oh, heaven. If you are going to fry cat fish, a corn meal batter would probably be best. Have fun cooking.

Baja Fried-Fish Tacos:

Prep and Cook Time: about 45 minutes

1 cup dark beer
1 cup all-purpose flour
1 teaspoon salt
1 1/2 pounds boned, skinned firm, white-fleshed fish such as Pacific cod or tilapia
Vegetable oil
12 to 16 corn tortillas, warmed
Cabbage and Cilantro Slaw
Chipotle Tartar Sauce
Lime wedges

1. In a bowl, whisk beer, flour, and salt until well blended.

2. Rinse fish and pat dry; cut crosswise into 1-inch-wide strips.

3. Pour about 1 inch of oil into a 10- to 12-inch nonstick frying pan (with at least 2-in.-tall sides) over medium-high heat; bring oil to 360°. With a fork, dip each piece of fish into beer batter; lift out and let drain briefly. Slide fish into oil, a few pieces at a time, and cook until golden (adjust heat to maintain 360°), turning if necessary to brown on all sides, 2 to 4 minutes per batch. With a slotted spoon, transfer to a paper towel-lined baking sheet. Keep warm in a 200° oven while you fry remaining fish.

4. To assemble each taco, stack two tortillas and top with a couple of pieces of fish, then a spoonful of cabbage and cilantro slaw. Serve with the chipotle tartar sauce to add to taste and lime wedges to squeeze over the top.

Yield: Makes 6 to 8 tacos (serving size: 1 taco)

simple batter -
four--egg--crushed-ritz-crackers

put-all in pan and saute until the onion is soft-
remove and set aside !
add more butter and o-oil to pan
dredge the trout and drop on the pan fry-3-minutes without moving -flip and do the same on the other side 2-minutes and add the good stuff on top cook 1-minute and plate
add 1-tablespoon flour-and some white-wine to the pan makes a gravey,add more lime juice and thin to a lite syrupy sauce add on top and you got a nice trout ,serve with mushroom,iceberg lettuce and tomato salad,-thousand island or thick italian dressin/vinegrate's are savory with this !!
don't forget some waffer'toast w/the salad !!

buy cat fish filets

buy shore lunch batter

add some seasoned salt to the batter..

batter em.

Fry em in a pot with enough vegatable oil to cover the whole fillets

when they are crunchy on the outside and tender to the poke of fork they are done.. usually if ur oil is hot enough 5-9 minutes..


Eat them with Sliced white bread and HOT sauce... tarter sauce if u like that too..

Lots of butter in the pan, lots of garlic and onion and put in fish, fry about 2 minutes on each side, take out fish and eat.

You need to season fish to your liking and roll in yellow cornmeal and fry.


Another way is but a tempura batter from any Chinese grocer and follow the directions on the package it's real easy.
