go to allrecipes.com. find one of the beef stroganoff recipes you like. adjust the number of servings to 15. it will calculate the amount of beef you will need. this is a great site for recipes,etc.

90 ounces top round steaks, cut into strips
3 3/4 medium onions, chopped
3/4 cup butter or 1 1/4 cups butter (if using fresh mushrooms)
3/4 cup flour
3 3/4 cans beef consomme
11 1/3 teaspoons catsup
1 1/4 tablespoons Worcestershire sauce
1/2 teaspoon pepper
1 7/8 teaspoons dried basil
1/4 teaspoon nutmeg
3 3/4 (6 ounce) cans mushrooms, drained or 30 ounces fresh mushrooms
3 3/4 cups sour cream, room temperature
Set sour cream aside to warm to room temperature.
Saute onions in 3 Tbsp butter.
Stir in flour.
Gradually add consomme, stirring constantly.
Add catsup, worcestershire, pepper, basil, and nutmeg.
Simmer at least 15 minutes, stirring occasionally.
Brown meat, salt and add to completed sauce.
Add canned mushrooms.
For fresh mushrooms, saute in 2 Tbsp butter, then add to sauce.
Just before serving, stir in sour cream and heat.
Do not allow to boil.
Serve with egg noodles or rice.
For 15 Servings

5 pounds ground beef
5 onions, chopped
2-1/2 cloves garlic, minced
2-1/2 (4.5 ounce) cans mushrooms, drained
1 tablespoon and 2 teaspoons salt
3/4 teaspoon ground black pepper
5 cups hot water
15 cubes beef bouillon
1/2 cup and 2 tablespoons tomato paste
3-3/4 cups water
1/2 cup and 2 tablespoons all-purpose flour

DIRECTIONS:
Heat a large skillet over medium-high heat. Add ground beef, add onions, garlic, and mushrooms; saute until onion is golden brown. Season with salt and black pepper.
Stir 2 cups hot water, bouillon cubes, and tomato paste into meat mixture. Stir together 1 1/2 cups cold water and flour; stir into pan. Reduce heat to low, and simmer for 1 hour.
