I just had the headlights changed in my 2003 golf, and I am going to assume it is the same or similar. You can't check the manual, becuase it just tells you to go the dealer.

What you do is open the hood, and look behind the headlights. There you will see a wire clip that runs vertical along the full height of the back cover. Pull that wire clip to the outside of the car (the fender side) to remove the back cover. Once that is done, and it's not easy as there is very little room to work, the bulb just slides out and the new one slides in. Replace the cover and you're done. The driver's side is harder as you have the battery to contend with, but it is not impossible.

I just went thru the same thing with my Honda. My husband & I spent about an hour trying to figure out how to take off all of the bumper parts, then realized that the bulb clips in from the inside.

Take a peek under the hood. It's very likely that you'll see the clamps that hold the bulb in. It should be pretty simple to disconnect it, and snap the new one ine.

Here is an easy way to change the bulb. Take it to JiffyLube for an oil change and have them change the bulb. They do it for the cost of the bulb plus about $2.00. You don't even have to get your fingers dirty.
