If I am picking the restaurant, I will ask what cuisine you're in the mood for, then if at all possible select a compatible restaurant that is not a national chain (and not a statewide chain either, if I can help it). The main appeal of chain restaurants is that you always know what to expect; I want to see how you handle situations where you don't know what to expect and you have to trust me a little bit.
If you're asking me to pick the cuisine, it'll probably be Italian or Mexican for the first date because those are "safe bets" that I don't have to agonize over whether you're going to like it too. You'll know I really like you when I drag you to my favorite Thai or Indian restaurant.

If it's a first date, I'd suggest something simple like Applebee's because it's relaxed, priced fairly well, and the menu has a great variety.
I love Italian food, Mexican food, Seafood, Chinese food, etc. I'm not picky and variety is spice to life.

I'm from New England so I like anywhere I can get seafood but since it would be a first date, Italian is always right up there too.

If the weather is nice, find a place that has a courtyard so you can sit outside. This can really make a meal great!
