I suggest trying Bank End Farm, in the Borders outside Carlisle. I'm a Yank but I've been all over the UK and have yet to see anywhere nicer.

Bank End has two self-catering cottages on a real working sheep farm.

The scenery is breathtaking, the cottages are very well kept and well appointed.

The proprietors, Malcolm and Jean, may be the most warm and welcoming people in all the UK.

The farm overlooks the Black Lyne River which becomes the Scottish border a few miles down. Day trips to Scotland, Gretna, the Lake District, Hadrian's Wall, etc. are an easy drive, as is Alston, England's highest (in elevation) market town. Alston is quite beautiful and the drive there is among the most scenic in Britain.

Plenty of good walking is available from the farm too, including Christianbury Crags.

Here is a link to their website: http://www.bankendfarm.com/

My wife, myself and our two kids stayed there for 2 weeks and CANNOT wait to go back.

It does depend on where you are to start with, as for a w/e you don't want to travel too far; also whether you are going now in the autumn or thinking of another season makes a difference.
So in the south west:- Bristol is good and they have a fantastic Rain forest museum. Cheltenham/ Gloucester is good with lots to do. Further east Cambridge is lovely and so is Ely but can get very cold in Jan/Feb. If you want the countryside try North Wales, with Conway Castle and Port Meirion or the Lake District; if you want a city Liverpool is good with lots to see and it won't matter if it is raining.
