any suggestions of what to do with a bowl full of blanched, peeled, tomatoes

Basic Tomato Sauce

Makes 4 cups

Ingredients:

1/4 cup extra-virgin olive oil
1 Spanish onion, chopped into 1/4-inch dice
4 garlic cloves, peeled and thinly sliced
3 tablespoons chopped fresh thyme leaves, or 1 tablespoon dried
1/2 medium carrot, finely shredded
2 28-ounce cans peeled whole tomatoes, crushed by hand and juices reserved
Salt to taste

Preparation:

In a 3-quart saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until soft and light golden brown, about 8 to 10 minutes. Add the thyme and the carrot and cook 5 minutes more, until the carrot is quite soft. Add the tomatoes and juice and bring to a boil, stirring often. Lower the heat and simmer for 30 minutes until as thick as hot cereal. Season with salt and serve. This sauce holds one week in the refrigerator or up to 6 months in the freezer.

Potato(big) - 1 no
(cut into small pieces)
Tomato(big) - 1 no
(cut into small pieces)
Egg - 1 no
Oil - 2 tsp(any oil)

Heat oil in a wide pan.

Add the potato pieces along with salt and fry for sometime.

If needed, cover it with a lid and let it cook on a low flame.

Add tomato and mix well.

Mash the whole mixture with a wide spoon, while still on low flame.

Add the egg into this.

If you don`t like the raw taste of egg, u may pour egg on a free side on the pan and scramble for some time.

Mix everything well on a medium flame, till it is semi dry.

Seed the tomatoes
sautee onions in olive oil until translucent
add salt and pepper
add garlic but don't burn it
add tomatoes and cook until water is released
add a little chicken stock
add some red wine
add some parsely
cook down
enjoy your sauce

taste throughout and make adjustments

Make tomato salsa:

5 pounds tomatoes
3 green bell peppers, diced
8 stalks celery, chopped
8 jalapeno peppers, seeded and minced
2 tablespoons white sugar
4 cloves garlic, minced
4 (4 ounce) cans diced green chiles
3 tablespoons salt
2 tablespoons dried oregano
1 tablespoon ground black pepper
3 onions, chopped
3 tablespoons chopped fresh cilantro

DIRECTIONS:
In a six-quart pot of boiling water, blanch tomatoes, drain and cool under cold water. Peel and coarsely chop. Return chopped tomatoes to pot, bring to boil and reduce heat. Skim juice from top of tomatoes and reserve, if you'd like, for another use. Do not overcook and allow tomatoes to remain chunky.
In two quarts of boiling salted water, add chopped bell peppers, celery, jalapenos, garlic, green chilies and cook until all ingredients are tender. Drain and add vegetables to tomatoes.
Add salt, oregano, black pepper and cilantro. Simmer gently for 15 minutes.
Hot pack the salsa in clean pint jars. Follow manufactures suggestions on preparing the lids and jars for proper sealing.

Mediterranean Summer Tomatoes

INGREDIENTS:
5 fresh tomatoes
5 shallots, coarsely chopped
1/2 cup olive oil
1/4 cup balsamic vinegar
1 loaf French bread, for dipping (optional)

DIRECTIONS:
Core and slice the tomatoes, and arrange them in a serving dish. Sprinkle the shallots over the tomatoes. Whisk the olive oil and balsamic vinegar together with a fork, then pour over the tomatoes. Let stand for 5 minutes before serving, or refrigerate, covered, for up to 3 days. Eat with French bread, and dip the bread in the marinade when finished with the tomatoes.

you cam make a vegetable soup or put some salt and a little sugar and it is great with vodka. or you can cut them up and the next time you have scrambled eggs just throw them in
