It would be a lot simpler to purchase a single phase motor.
However, if your horsepower requirements are greater than say, 3 HP, you might want to look into a phase changer, making your supply 3 phase.

tap each line separately. it will have three power out lines and a ground.. you can blend the phases electronically, but the bridge and control equipment costs more than just getting another motor for your single phase requirements if tapping one phase will not provide you with enough power.

You may also be able to get it to work at greatly reduced capacity using a capacitor on one of the windings.
