8 ounces lasagna noodles
2 tablespoons salt for cooking water
1 tablespoon olive oil
16 ounces low fat ricotta cheese
8 ounces sliced Mozzarella cheese
Sauce , below
1/3 cup grated Parmesan cheese

Sauce:
1/2 cup finely chopped onion
2 cloves garlic, minced
3 tablespoons olive oil
1 pound ground chuck or round
1 large can (28 ounces) tomatoes
1 can (6 ounces) tomato paste
2 teaspoons salt
pinch cayenne pepper
1 teaspoon sugar
1/4 teaspoon dried basil
1 bay leaf
2 cups water
PREPARATION:
Start sauce about 30 to 45 minutes in advance.
Sauté onion and garlic in olive oil until onions are soft; add ground beef and brown. Pour off excess fat. Add remaining ingredients; stir well. Simmer slowly, uncovered, for 1 hour.
Cook noodles in boiling water with 2 tablespoons of salt for about 25 minutes, or until tender, stirring frequently to prevent sticking. Drain; add 1 tablespoon olive oil. Arrange noodles in a shallow 2 1/2-quart baking dish. Make 3 layers each of noodles, ricotta cheese, Mozzarella cheese, meat sauce, and Parmesan cheese. Bake, uncovered, at 325° for 45 minutes.
Serves 6.

Just make your lasagna the way you usually do. Before you assemble it, cook some ground beef or sausage, drain set aside. Saute some chopped onions and red(sweet peppers) in olive oil. Mix vegetable mix with meat mixture and make it a separate layer of the lasagna. You could also use shredded chicken or sliced meatballs.

I just found a quick and easy recipe on allrecipes.com, but it doesn't vary to the one I usually make. I make my own tomato sauce and season the ricotta with herbs, garlic and parmesan. I saute ground meat with garlic, thyme, oregano, salt and pepper. I had an old friend who would also fry up a couple of pork chops(seasoned) and then chop the meat to add to the sauce. Then layer, first the ricotta with cheeses, mozarella, lasagna leaves, then the sauce. Continue until pan is full, bake in the oven for an hour at 350F and add cheese on top 10 minutes before serving.

Chicken Lasagna Florentine:

2 cups chopped cooked chicken
1 (10 3/4-ounce) can cream of mushroom soup, undiluted
1 (10-ounce) package frozen chopped spinach, thawed and well drained
2 cups (8 ounces) shredded Cheddar cheese
1 (6-ounce) jar sliced mushrooms, drained
1/4 teaspoon pepper
1 cup sour cream
6 lasagna noodles, cooked and drained
1 cup grated Parmesan cheese
3/4 cup to 1 cup chopped pecans

Stir together chicken and next 6 ingredients.

Arrange 3 noodles in a lightly greased 11- x 7-inch baking dish; top with half of chicken mixture. Repeat layers with remaining noodles and chicken mixture. Sprinkle with Parmesan cheese and pecans.

Bake, covered, at 350° for 45 minutes; uncover, and bake 15 minutes or until bubbly. Let lasagna stand 15 minutes before serving.

To Make Ahead: Cover and chill. Let stand at room temperature 30 minutes before baking; proceed as directed.

To lighten: Substitute reduced-fat cream of mushroom soup, 2% reduced-fat Cheddar cheese, and reduced-fat sour cream.

Yield: Makes 6 servings

I cook approx 5lbs of hamburger, once cooked add Ragu and let simmer on stove. You can get the no boil lasagna noodles line a row on the bottom of a cake pan, then spread the sauce over the top of that, then spread cottage cheese on top of the sauce, put one more layer of noodles and then sauce. Bake at 350 degrees for 45minutes. When it's 15 min away from being done layer mozzarella cheese on top, finish baking and done.

Just brown the meat in a skillet( hamburger, sausage..whatever) with a bit of salt, pepper and garlic....then add it to your sauce.
For a beginner follow the recipe on the box of lasagna noodles...but as I said above add the cooked meat to your sauce:)

I hope you like a lot of vegetables! You will need the following:
Hamburger meat-how much depends on how many you are feeding
Pepperoni-enough to layer to lasagna
Italian Sausage-depends on how many you are feeding
Cheese-shredded-any flavor you like-as many bags as you like(the cheesier the better)
Spaghetti sauce-at least 2 jars-any brand and flavor you like(I use Ragu)
Lasagna noodles
mushrooms,green and red peppers, onions-as many as you like(I use one of each)
seasoning salt-to season the meat while cooking

First you will start a pot of boiling water for your noodles, next you begins to brown your hamburger and sausage (in different skillets). While that is cooking, you can begin to chop up your veggies and set them aside(you can cut them any way you like). Cook your noodles the way it instructs you on the package. When the hamburger is about 10 minutes away from being done, you can add your veggies, including the mushrooms. (Or you can put them in a skillet by themselves)
When all of your meat is finished cooking, dump everything into a large bowl (only the meats and veggies), empty the spaghetti sauce into the bowl, mix it together and set aside.
Line the bottom of your pan with a layer of noodles, on top of that, you will spoon the meat sauce over the noodles, use as much as you think you need(I use alot because I like to have a meaty lasagna). Sprinkle a some cheese over the meat sauce and on top of the cheese, you can add a layer of pepperoni and on top of that, you can add another layer of noodles. You will continue doing that until you are at the top of the dish. You can do one of two things: You can top off you lasagna with meat and cheese or you can top it off with a layer of noodles and cheese. I prefer to top it off with meat and a ton of cheese and pepperoni. Once you have put together your masterpeice, pop it into the oven until the cheese is starting to bubble, about 20 minutes. Serve with salad and garlic bread or garlic toast. I hope I have helped you! ENJOY!!!!!!!!!

make meat and sauce like you would for spaghetti, and use that when you are layering your lasagna instead of just sauce
