Sorry, went the easy route and picked up chinese take-away tonight...
Though, if I were looking for home cooking -
Pan fry some pork chops (or boneless chix breasts) with sweet onion or shallots.
Into a bowl pour one can of condensed cream of chicken soup, mix in 1/2 can water and 1 TBSP brown sugar (yes, just do it, don't question it, lol). When soup/gravy is well combined, pour it over the chops and turn the heat down to a low simmer. Cook just until the gravy is warmed through and the meat is still tender and moist. Serve with mashed potatoes and/or steamed veggies.

Ground beef filled Squash
I take the base of a yellow squash and dig up the inside and stir fry that with ground beef and then I fill the digged up squash base with the cooked beef and squash and top it with shredded parmesan cheese. Then I put it in the oven for about 15 min at 400F.

Im making tequilla shrimp...Its jumbo prawns wrapped in bacon, then sauteed in teqilla, tabasco suace , and orange juice. It is soooo good. I picked up the recipe from a resturant in Cabo san lucas. It was soooo good , I had to get the recipe from the chef. Then serve rice and steamed veggies on the side.

Not having it tonight, but my favourite quick dinner is baked tattie, cheese, coleslaw and salad.
Chuck the baked potato in microwave for 9 mins, cover in olive oil and then chuck in the oven for 15 mins. This gives the tatties a crisp texture ... yumm!!

Tonight I'm having jambalaya with cheese in it, and black-eyed peas. Tomorrow? Fried chicken patties with white gravy, and the leftover black-eyed peas. I plan a week at a time :)

I am not sure. I DO know what I am getting for dessert. Maybe
a portobello, mushoom, roasted red peeper, provolone sandwich on foccocia bread with balsamic vinegar and olive oil and basil.
