Here's a simple dressing and it's soooo easy and fast.
Ranch dressing a little white vinegar, salt and pepper to taste add som parsley for contrast.
Add sliced cucumber to it. Also, taste as you go and add the white vinegar according to what pleases you.

Hi there,
My mom always made a simple mayonaisse-based dressing with just a cucumber. Slice your cucumber in half lengthwise, then slice it up (not too thin, but not too thick). A little mayo, a little apple cider vinegar (depends on if you like sour food or not), a little sugar (to kill some of the acidic taste, or more if you like sweet foods), and some salt and pepper to taste. You may want to prepare the dressing in a separate bowl as to not mush up your cucumber. After the dressing is mixed, add cucmbers, and there's a basic cucumber salad! You can also add onions if you'd like, but be careful, because they are a very overpowering taste.
You could also, if you have some tomatoes, make a tomato and cucumber salad (and again, some onions if you like). A light vinegarette would be good with that. Maybe add some mozzerella and toasted garlic bread (or a stiff cracker) for a pseudo-bruschetta sorta thing. Enjoy!

Slice it thin, add some thinly sliced red onion, and pour balsamic vinaigrette over top. Let sit in fridge for about an hour, and TA-DA! Yummy!
