Homemade Buttermilk
This recipe yields 4 servings
* 1 cup whole milk
* either 1 and 3/4 Tablespoons cream of tartar or 1 Tablespoon white vinegar or 1 Tablespoon lemon juice
Add acidic ingredient (tartar, vinegar or lemon juice) to the milk and stir. Let stand at room temperature for 15 minutes. The milk should start to curdle. Stir well before using.
A combination of plain yogurt (3/4 cup) and whole milk (1/4) cup can also be used to replace a cup of buttermilk in most recipes.

When a recipe calls for buttermilk, I take a cup of whole milk and add a teaspoon of vinegar and let it sit for 5 minutes. It curdles and is just like buttermilk for baking. I'm not sure how it would be for drinking, however.

I don't think you can actually make real buttermilk. After farmers skim off the cream/fat from regular milk, the buttermilk is the sour stuff that's left over.
If you want to substitute for baking, you can add 1 teaspoon cream of tartar to 1 cup of milk, stir, and let it sit for about 10 minutes at room temp. I don't think I'd drink it (yuck, lol) but it's fine for baking. :)

i guess i can't imagine making homemade buttermilk if you don't own a cow. buy it at the store, is what i say!
