First course:
Penne Pasta - with sauce

Sauce - Get good tomatoes, desead and blend them in a blender untill the turn to liquid.
Pour into a pan, add a good olive oil not too much but just enough to mix well with the amount of sauce your making.
sprinkle in salt, pepper, garlic powder to taste. make sure that you stir it the entire time. (key to sauce tasting good is the tomatoes you use and the olive oil - gotta get the good stuff - claudio's on 9th st in south philly - or the italian market)

Pasta - boil water and cook till aldente

Entree:
Chicken Marsala

Chicken - fry in pan with olive oil

Marsala Sauce - pour marsala wine sauce in seperate pan mix in sherry and a little butter if you like, salt, pepper...to taste...add a little flower just to thicken and when sauce competed pour into pan with chicken.

Side Dish:
Fried Zuchini

Fry Zuchini in olive oil with peppers and onions...add salt and pepper...very simple tastes amazing :)

Krispie treats
in a microwave, Melt 40 large marshamallows in a buttered bowl with 2 tablespoons of butter or margarine. Butter a wooden spoon to stir. Put in for 2 minutes, then stir and only put in at 30 sec. increments-do not overmelt. Take out of the microwave and add 6 cups of rice krispies. Mix and put into a buttered 13 x 9 pan. Press into place with wax paper or slightly damp hands (to keep from sticking). Put into refrigerator to set and then cut into squares and enjoy.

This recipe is my ALL-TIME favorite cake...including chocolate ones! lol Enjoy.........

Strawberry Cake

1 strawberry cake mix
2 pints strawberries, sliced
12 oz cool whip, defrosted
12 oz sour cream
¾ cup sugar
1 tsp vanilla

Prepare cake mix as directed on box, bake in three layers, and cool. Fold together Cool Whip, sour cream, sugar, and vanilla for ‘icing.’ Layer cake as follows: cake, strawberry slices, icing. Repeat layers. Finish by icing sides of cake. Chill in refrigerator several hours before serving.



"Figure Friendly" Strawberry Cake

1 angel food cake mix
2 pints strawberries, sliced
12 oz Cool Whip, defrosted (light or regular)
12 oz sour cream (light or regular)
¾ cup baking Splenda (or other sugar substitute of your choice)
1 tsp vanilla

Prepare angel food cake as directed, (I added 3-4 teaspoons of strawberry extract for a richer strawberry flavor) bake in normal angel food cake pan. Cool completely then slice into three horizontal layers. In a separate bowl, fold together Cool Whip, sour cream, Splenda, and vanilla for ‘icing’. Layer cake as follows: cake, strawberry slices, icing. Repeat layers. Finish by icing sides of cake. Chill in refrigerator several hours or overnight before serving.


Insider notes:using light sour cream does not impact the flavor at all! Also, as it is difficult to find 12 oz containers of sour cream and Cool Whip, I normally buy the 16 oz, and add a little bit more sugar and vanilla so that I have plenty of icing. If any is left over it’s wonderful as a dip for strawberries, or you can make cupcakes etc.
