I'm sure this is easy but I can't figure it out !

Select Options under the Tools menu.
Click on the Spelling tab.
Choose your settings there, and click OK.

You'll have to make Microsoft Word your default mail editor.

You can't because there is no option to do so. You have to buy an external app to do it for you such as:

if you look towards the top of your screen when on it you will see an abc symbol click on it, then follow the instructions!

I think you need to be using MS Word as your email editor to do that.......

TOOLS-OPTIONS-MAIL FORMAT-check off USE MS WORK TO EDIT E-MAIL MESSAGES.
