I'm making stuffed peppers in the crockpot tonight and I'm just wondering what is good to serve with them as a main dish?

STUFFED ZUCCHINI GREEK STYLE

3 zucchini halved lengthwise
1/2 c. olive oil
3 onions, chopped
1 can tomatoes (16 oz.)
1 c. rice
1/2 c. water
1/4 c. fresh chopped parsley or 2 tsp. dried parsley
Salt and pepper to taste
1 c. raisins or Greek currants
1/2 c. water, more if needed
1 c. diced meat (optional)

Meatless main dish for 6. Turn it into a meaty main dish by adding 1 cup diced lamb or beef just before stuffing the shells.

Scoop out pulp from zucchini to leave a shell about 1/2 inch thick. Chop and reserve pulp. Parboil zucchini halves in salted water for 5 minutes. Drain. Saute onions and zucchini pulp in olive oil until soft. Add tomatoes, rice, water, parsley, salt, pepper, and raisins. Add water slowly as mixture thickens. Cook until rice is done. Add meat if desired. Fill zucchini shells and bake for 20 minutes at 350 degrees.

Generally, stuffed peppers are considered the main dish. Assuming you are putting meat into the peppers, you want something on the side. Mashed potatoes are a good choice, and maybe a bright salad.
If you are stuffing your peppers with vegetables and rice only, you could put any small serving of meat on the side. Take your pick (lamb chop, chicken piece, fish, pork chop, etc...)

We use ground beef and rice in ours but we sometimes have mashed potatoes, chunked or baked on the side. You can add some of the juice from the peppers to the potatoes, yummy. Most of the time we just add fruit and bread with butter as the sides.

If you stuff your peppers with ground beef and rice you really don't need much of a side dish, but maybe a nice salad.

Salad and crispy bread goes well with stuffed peppers.

why not try cous cous,with loads of fresh herbs put throw it.heres a tip for cous cous try using a disolved stock cube in hot water to cook the cous cous,it gives it a really nice flavor.
if you dont fancy that,try sweetcorn,carrot and sweet potatoe mash.cook all veg,add together and mash and then add butter and seasoning.its really nice and also good with sausages and onion and mushroom gravy.x

seeing that you should have used rice in the meat for peppers so your set for a starch...i would serve a nice green bean cassarole and a ceasar salad....

Stir fry rice sounds great!

Mashed potatoes mixed with warm butter and parsley might also work fantastically!

Thinking about different textures....try a green salad or some steamed mixed veggies.
