Is it safe? Generations past have been doing it for years. Thoughts?

Yes, it is completely safe. There is nothing that will cause food poisoning in a cake.(everything is completely cooked).The only reason that you need to refridgerate leftover frosting is so that you may extend its shelflife and use it on your next cake. you can leave the iceing next to the cake on the counter if you like but it will be hard as a rock the next day.

I really like this question, you have a good point, everyone leaves out their cakes but we all refrigerate the leftover frosting. I don't actually have an answer for you, but it's a really good point!

yes it is left over icing must be frozen cause you can use it months afterward again
