4 skinless, boneless chicken breasts
1 cup Italian-style salad dressing
2 cups seasoned dry bread crumbs

Preheat oven to 350 degrees F (175 degrees C).
Dredge chicken breasts in salad dressing, then coat completely with bread crumbs. Place coated chicken breasts in a lightly greased 9x13 inch baking dish and bake in the preheated oven for about 30 minutes, or until chicken is cooked through and juices run clear

Serves 4 - This is easy once you have done it. My family has used this recipe for the last 60 years. The only change through the years is using oil instead of shortening. It also works very well for pork chops, though the cooking time will vary with pork.

1 package boneless skinless chicken breasts, preferrably tenderloins
2 cups italian breadcrumbs
Salt
Pepper
Garlic Powder
1 c milk
1 egg
Canola oil
Frying pan

1. Wash and pat dry chicken. Spread out on cutting board, and pound flat with a meat mallet or the bottom of a water glass.
2. Add salt, pepper, and garlic powder to taste to the chicken.
3. Put the egg in a bowl, and scramble it. Carefully dip the chicken pieces into it.
4. Put italian breadcrumbs in a quart size zip-loc bag. Add the chicken two pieces at a time. Close bag, and shake the bag until coated.
5. Lay the now coated chicken back onto the cutting board. Pour the milk into a bowl, and dip the coated chicken into the milk.
6. Put the chicken pieces back into the bag of breadcrumbs, and recoat. The double coating allows the chicken to stay moist inside and very crisp outside. Wash hands
7. Add 1-2 inches of oil to the pan, and set temp on med-high. after oil is heated you can lower to medium.
8. Add chicken to oil, three to five pieces at a time. Oil must be hot. Turn chicken over after each side becomes golden brown, 5-7 minutes.
9. Remove from oil, and set on a paper towel covered platter. Let it rest for several minutes. This will set the crispyness and remove oil.

This goes very well with yellow rice and beans.

take the chicken breasts, toss them in seasoned flour (seasoned with salt, pepper, and any other seasonings you like), then dip in beaten egg, and toss in bread crumbs, put in a preheated pan with canola oil (275-300 f) and cook 8 minutes , turn over, cook another 8 minutes. if chicken breast is a larger one, cook 10-12 minutes per side.
