Saigon cinnamon (aka Vietnamese cinnamon) has a strong flavor. Its bark contains 1 to 7% of essential oil; this is, at its upper limit, considerably more than found in other cinnamon species.

If used with care ( do not over do it!), it can be delicious. If used like any other cinnamon, it can be overpowering.
