I work in a Psych unit and we have a cooking class once a week and I am running out of different things I can make, I have a blender, a hot skillet, a fridge and a microwave. (NO STOVE) all of the things I make have to be low in fat and offer a diabetic version, and they have to be quick my group time is a total of 45 so no more than 30 minutes to have it on a plate to serve. I appreciate any advice and they need to be GOOD =)

Any kind of shake that you can make in a blender that would be safe for diabetics - strawberry, banana, etc..

take some hamburger meat and mix some salsa and minced garlic ( the kind you buy in a jar) then cook that on a skillet. This gives a twist to a ordinary burger and tastes juicy just don't add too much salsa or the burger won't stay together.

How about a Microwave Cheesecake, it takes about 15 mins to make. I would have to look for it my cook book, or ask my Mom. But it is YUMMY it taste like I spent hours banking over a hot stove!!!

There is alot you can do with Jell-o.

You can make Chicken breast with Thai peanut sauce (organic peanut butter, soy sauce, vegetable oil and garlic/spices) That takes me about 30 min and I make it in a skillet... You have to expiriment with the sauce and try different things to make the peanut butter get to the right flavor and consistency for you.

Buy the book, "The Four Ingredient Cookbooks," by Coffee and Cale. Published by Coffee and Cale, 1990, Kerrville, Texas. Every recipe requires no more than four ingredients. I use it all the time when my wife goes out for dinner with her girlfriends.

basic TATOR-TOT CASSEROLE a million/2 a million lb beef a million can green beans a million can corn 2 12oz. cans cream of poultry/mushroom a million/2 cup water sufficient Tator-toddlers to cover the best of dish shredded cheddar cheese Brown the beef (ideally 7% fat or much less). place the beef into the backside of a 13x9x2 in. casserole/baking dish. combine green beans, corn, cream of poultry/mushroom, and water in a medium bowl. Pour the mixture over the beef. organize the Tator-toddlers to cover the mixture. Bake in a 350°F oven for 20-25 minutes, or till Tator-toddlers are gently browned. Sprinkle shredded cheese over the best and bake for 5 greater minutes. enable cool on twine rack for 5 minutes, then serve! relish! EGG SAUSAGE CASSEROLE a million lb. bulk sausage 6 eggs 2 c. milk a million c. grated cheddar cheese a million tsp. salt a million tsp. dry mustard 2 slices bread, cubed Brown and drain sausage. Beat eggs with milk, salt, and mustard. Layer bread on backside of buttered casserole, sprinkle sausage, good with cheese. Pour egg combination over all. Bake 30-40 minutes at 350 stages for till good is browned. Serves 6 and could be doubled.
