I think it's a licorice flavored alcohol but I'm not sure.

Here's the recipe I found it in!

Shrimp and Fennel Sauté
Serving Size : 2

1 Tbsp Olive Oil
1/4 Cup White onion, sliced thin
1 Cup Fennel, sliced thin
1 oz Pernod
1/2 Cup Tomato, chopped
1 Tsp Orange Zest, chopped
2 Tbsp Orange Juice
12 Large Shrimp, peeled and deveined
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper
2 Tbsp Unsalted Butter, cut into small pieces

In a large saute pan heat oil. Add the onions and fennel, cook, stirring for 3 minutes, or until the vegetables begin to get soft. Carefully add the pernod, it may ignite. Allow to cook for 1 minute. Add the tomatoes, orange zest, and orange juice, and shrimp, and cook for 5 minutes. Using a spoon, add in the butter, swirling to incorporate it completely. Season to taste with salt and pepper and serve.

Other Licorice flavored liquors are Ouzo (from Greece), Sambuca (from Italy) and Anisette.

Since your recipe is only asking for 1 ounze of Pernod, I would simply leave it out. The Fennel flavor will be overwhelmig anyhow.

All Pernod tastes like fennel. There are plenty of alternatives, look for your local booze stores home brand of any of the following :- Pastis (generic French name for the drink) Ouzo (greek version) Raki (Turkish) Sambucca (Italian version) Arak (much of the middle east, Egypt, Israel, Syria, Lebanon that sort of area so it should be found fairly cheap anywhere with a large middle eastern population) Anisette

Sambuca is also a licorice flavored liquor, and works beautifully for a Pernod substitute. I use it often. Anisette works, as well.

Both are good for you, each fruit/vegetable has different vitamins. And so as more variety, as better. Vegetables have generally less sugar than fruits.

There are other French drinks like Ricard available. The type of spirit is called "pastis". Its there to emphasise the aniseed flavour of the fennel. You might try adding fennel seeds as well to intensify the taste.
