because there mouth becomes dry and they feel like they are choking, that happens to me sometimes.

Because there is an excess buildup of bodily fluids when a person is nervous, which include - increase in sallaiva, increase in sweat production, excess buildup of everything pretty much. Even the heart increases in BPM.
Those are the tihngs that come naturally, although can be controlled with an effort.

Nervousness makes your throat dry and the swallowing is an attempt to moisten it.
