okay gooch give you a couple of his favorite right out of me head,,
mm fav with any fish 2

Garlic butter
2 garlic cloves, peeled and crushed.
2. oz of butter
pound in the butter into the garlic(good for stress)
Rub the butter mixture throw a fine sieve

rub all ovea fish like all ova fish wrap in tin foil grill.

Maitre d Hotel butter (most common)
2 oz (50g) butter (butter is better)pun)
2 teaspoons lemon juice
2 teaspoons finely chopped FRESH parsley
salt & black pepper to taste.
cream the butter dont beat it add the lemon juice very gradually....
slower,,,i said gradual,,,Mix in Parsley and seasoning;;';';'.
goochy runs off to cook some fish cant tell any more recipes today ...sorry

I have always thought of drum as a trash fish. I can remember, in my youth being told by the old-timers that the only good way to cook drum was, and this is a bit complicated, as follows. Nail it by the tail to a cedar plank. Place the plank and the fish into a shallow baking dish. Mix 12oz of Jack Daniels with 24oz of Coke, in a jumbo tumbler, add a dash of lemon. Wave the tumbler over the fish three times then throw the fish, the plank, and the baking dish away and drink the rest. :-)

Redfish is tastier but much less fun.

We usually rub it with olive oil, press with fresh garlic, and grate black pepper on it.
