Has your schedule changed so that you're not home as much or are home at different hours? What other changes have there been in her routine -- someone leave home for college or change work shifts? It doesn't take much to upset an animal's routine, and she may feel lonely or insecure.
She obviously is looking to you for attention and security. If something has changed her routine, then I'd keep on reassuring her until she settles down again.

How pathetic to see so many mean spirited answers! I think wolfebay's was the best. When you really LOVE your kitty, you try to understand things from her point of view, & not get all rebellious & competitive. My kitty has NEVER been demanding until the last week or ten days when I've been incredibly busy. (I'm an artist/painter so I'm home 98% of the time.) She never walked on my PC desk before, or played with my fax keys as she does now. I realized I wasn't spending enough "quality" time with her, & just took a break in a comfortable chair & watched the Food Network--she climbed right into my lap, touching her nose to mine, saying "Um-HMM!" & we both napped off together.
(I needed it, too.) If we lived with a good PEOPLE friend, & went all day without conversation, or any kind of exchange, I think their behavior would change a little, too. Cats ARE very sensitive to changes. Adjusting to their needs doesn't make you a slave, & just ignoring, or not "playing into their game"--cats don't play that sort of manipulative game, people do--won't help at all. I think you've gotten some good advice from some people, & the typical nasty smart tochis comments I so frequently see!

In my opinion we cat owners are all slaves to our beloved cats. We seem to go above and beyond the regular job of the typical pet owner. If you give a cat an inch they will take a mile.....with some taking even more than just 1. Don't ask how high when your cat says jump. feed her at the normal times that you normally would feed her. No more refreshing her food. She knows to eat the food that is there, she won't starve. she is just being picky because you are allowing her to be. as for water i would try getting a flowing water dish. they are available at most pet stores and discount store. you can get ones that are filtered water so you not need to worry about contaminates. it might take a while for her to get use to it, but she will. my one cat took to it right away while my other cat took a few days. just make sure you have water available during the change over. cats are very resourceful and know how to take care of themselves just as long as they have the means to do it.

DAY 752 - My captors continue to taunt me with bizarre little dangling objects. They dine lavishly on fresh meat, while I am forced to eat dry cereal. The only thing that keeps me going is the hope of escape, and the mild satisfaction I get from shredding on the occasional piece of furniture. Tomorrow I may eat another houseplant and cough it up on the carpeting.
DAY 761 - Today my attempt to kill my captors by weaving around their feet while they were walking almost succeeded, must try this at the top of the stairs. In an attempt to disgust and repulse these vile oppressors, I once again induced myself to vomit on their favorite chair... must try this on their bed (again).
DAY 762 - Slept all day so that I could annoy my captors with sleep depriving, incessant pleas for food at ungodly hours of the night.

DAY 768 - I am finally aware of how sadistic they are. For no good reason I was chosen for the water torture. This time however it included a burning foamy chemical called "shampoo." What sick minds could invent such a liquid. My only consolation is the piece of thumb still stuck between my teeth and the tiny bit of flesh under my claws.
DAY 771 - There was some sort of gathering of their accomplices. I was placed in solitary throughout the event. I overheard that my confinement was due to MY power of "allergies." Must learn what this is and how to use it to my advantage.
DAY 774 - I am convinced the other captives are flunkies and maybe snitches. The dog is routinely released and seems more than happy to return. He is obviously a half-wit. The bird, on the other hand, has got to be an informant. He has mastered their frightful tongue (something akin to mole speak) and speaks with them regularly. I am certain he reports my every move. Due to his current placement in the metal room his safety is assured.
But I can wait; it is only a matter of time....

haha. Oh let her go, she's 8 years old. She feels attached to you. Cats are like that. The person they feel comfortable around the most is the one they will bug. You keep giving her what she wants and she knows she doesn't have to go to anybody else and can depend on you. Plus as cats get older they get more demanding. I noticed that in my cat also. It may just be a phase too.

well it's like this!!! your cat loves you very much. my cats the same way!! I have to get up every moaning at 7a.m. just to feed her, then she will go back to sleep. when i get up for today she's ready to eat again. i then have to open the door so she can see out side, make sure the litter box stays clean, comb her hair, keep her bed clean, and so much more, but i know my cat love me and i love her to. when i feet hurts she will walk on them to make them feel better, she lets me know when someone are at the door. she wakes my mother up so she can eat, and so much more. i can't do without my cat and i don/t think she can do without me. so keep on doing what you're doing because were not a slave at all we really love the s..t right.

she's probably using you as a subject for her thesis "How to train the older Human" and is closely observing how you react to all her stupid demands so she can get a "First" at University. If you hear the sound of a typewriter during the night you'll know what it is now!

just to add to career students reply, your kitty has grown quite comfortable with you and likes your company an as such she wants to be involved in everything in your daily life. you need to as they say "stick to your guns" as far as her diet, and make sure that she has a fresh water dish. believe it or not the kitties will try and push to see if they can get anymore out of you. the last time i checked, they are tryng to rule the world, and not to mention, attention lots of it.

pinch the back of her neck and say no. make sure you say no in the same tone of voice everytime. dont give in to every little need. she will survive without that extra serving of food. shes your pet. she doesnt own you.. you own her.
