Because it's so much easier if you are the one to decide that it won't work. Now you're left with no choice in the matter, and we all want choice. In the end be thankful that she didn't waste more of your time if she didn't feel the same about you. You could have stayed with her in an unhappy relationship where you both end up hating each other. Takes time.

Dude the same thing just happened to me. Stay active. Hang out with your friends, take a class, pick up a sport or volunteer for something. Don't think about contacting her or try to rationalize what she did. Staying active will get her off your mind and you will meet new people. Good luck man, and remember it may not seem like it now, but there are plenty of beautiful girls out there. Get back on your feet and another one will come along.
