I don't know about Don but Dom Perignon has no flaws in it's Champagne. There is a Blank de Noir which is pink that they make. It's very nice and Dom Prignon was a Monk who figured out how to make Champagne. Vuve Cliquot Ponsardin actually invented the method Champenior. The name means Ponsardins Widow. The Champagne they make that is similar to Dom Perignon I think better is Grand Dame. Crystal is in the same leauge. Dom is part of Moet Chandon and Crystal is Roieder originaly made for the Czar till they shot him and his family.

All wines have some bitter dregs . that is why you store them at an angle with the neck down so you can pour them out before drinking the rest.
