For the most part, they're interchangeable but, if the recipe calls for one in particular, I'd use it for best results. I think Crisco is the one I'd choose overall.

If your going to use lard in baking, use pork lard, it has a neutral flavor. Beef lard taste like meat. In pie crust, lard will give you a more flaky texture. And many experts are changing their mind about lard, because of the Trans-fats in hardened vegetable oils, may just be worse than the cholesterol.
If you use Crisco, you should increase the amount by about 10% because it contains a bit more water than lard.

Crisco is Palm Oil - Bad, It is Hydrogenated - Bad. Lard is just fat - still bad, but better than Crisco.

Lard is not healthy, although it make a better pie crust. If you cook with it, it is not very good for your arteries. But yes, you can use shortening in place of lard. I believe shortening is a vegetable fat opposed to animal fat (lard).

Both are good for you, each fruit/vegetable has different vitamins. Thus as more variety, as better. Vegetables have generally less sugar than fruits.
