I have had people tell me that you can "train" the battery in a cordless phone. If you leave it off the charger until it goes dead, then charge it. My question is does it really make a difference what you do?

Yes, it does make a difference. You should keep your phone off of the charger at least once a month, until the battery is completely dead. If you charge it every night, the charge will not last as long, it's not good to charge it every night, you don't need to, unless you use it all day, then you probably should. If you don't charge it every night the charge will last longer. Just let the charge run down, once a month, then put a good 12 hour charge on it..good luck..
