See http://www.winelabels.org/remove.htm for a variety of methods.

If it is a modern wine then its likely to have a self adhesive label. Best way to gett hese off is to melt the glue by pouring boiling water into the bottle and peeling off label 5-6 minutes later.

The wine label book "Marilyn Merlot and the Naked Grape" by Peter F May gives detailed instructions.

Label off by Oenophilia

Keep logs of every bottle of wine in your collection with the Label Off™ Wine Label Remover by Oenophilia. This pack of 10 label removers provide you with a wonderful, convenient way to peel of the label off any bottle of wine without tearing it or damaging the bottle.

Each pack consists of 10 Label Off™ sheets that work by laminating the labels as you stick them on. The unique formula splits the printed surface of the label from its adhesive backing. Then as you gently pull the tab and peel the sheet off, it also peels the Label Off™ with it. This leaves you with a laminated wine label for your wine journal which you can show off to friends or take with you to your next wine tasters' club meeting.

Just soak the bottle (and label) in hot water for a few minutes. It should come off easily. Dry it flat and you're good to go.

I never heard of anyone collecting lables from wine bottles. Just corks.

I always soak the bottle in soapy water until it comes off easily; sometimes it takes 24 hours. Maybe hot water would work faster.

The soaking in water method, mentioned above, is good. But I'd add a drop or two of dish soap to help the glue release.
