It depends on the size. They do take awhile. Bring to a boil, then simmer. Roll them around once in awhile in the water so that both sides are done evenly. In general, take one of them out of the water after about 20 minutes and pull the bottom leaf. If it detaches easily, it's done. Sometimes it takes up to 45 minutes for the larger, tougher ones.

I always throw the artichoke in the water, before it boils and let it go for about an hour, rotating it in the pot, if it's not big enough to be completely submerged. You'll know it's done when the leaves easily come off.

place the choke in the boiling water, cover with lid, reduce heat to simmer, and steam for 30 to 40 minutes (depending on size) -- they are done when the leaves pull away easily.

If you are just putting them in plain they will be done in 30 minutes check leaves to see if they pull off easily. If you are stuffing them which i suggest to do with bread crumbs, oregano, chopped fresh garlic, grated romano and olive oil it can take 45- to an hour depending on size.

I think I will steam them in the micro. I din't realize they had to cook that long and my hubby has rehearsal tonight.
