I find the best way to get the most flavor out of garlic is to,firstly, peel it and then put it through a garlic mincer. next add a bit of salt and stir well. i'm not certain of the chemistry but the salt definately enhances the flavor. stirring in the salt tends to make the garlic mushyish.

For most of my recipes, I just chop it. I think the mortar and pestel would turn it into mush.
A garlic press is a great way to chop fresh garlic. And there's so many great things you can make with garlic: put it in a salad, make pesto, garlic bread. The great thing about garlic is it's delicious AND it's good for you!

Two schools of thought: mince or crush. Which releases the flavor best? My choice: always mince. If you crush garlic (esp with the flat of your large knife) you squeeze out all of the essence in one glob and leave the fabric of the clove as a pulp. I think this overloads the dish with pungency and lacks subtlety. I think mincing better distributes the flavor and by keeping it infused with the pulp much longer.

Pound or press it for best results, though it really depends on the the preparation, if sauteing it slowly, simply bruise the clove and let the essence seep out slowly, exquisite.

Rub the garlic clove on toasted sourdough bread and enjoy with sliced cheddar! It's sooooo good!!!

use it in this one dinner that my family calls sausage supper
boils some egg noodles, and at the same time, cook up some stirfry ingredients and miz some kilbasa with it. add some mincedc to it and serve =]
