Ok, this may be a dumb question but I seriously don't know -- I'm cooking up some Italian sausage with diced potatoes and such; it's in a thin casing - am I supposed to remove that or is that edible?

Its completely edible. It is intestine lining from pigs. Some people do slice open the casing and use the filling from it to mix in their meatloaf and such. Most sausages are pre-mixed with garlic, cheese, parsley and makes for a good combination of flavors when added to regular hamburger for their meatloaf.

Make sure you have chosen the right flavor of sausage for your dinner. It comes in a variety of flavors, hot, spicy and the like. Have fun!

Depends on what effect you're trying to achieve. It is edible, but if you think having loose sausage with your potatoes would be better, go ahead and remove it.

Why would you use a slow cooker for Sausage and Peppers? By the time you brown the Sausage and clean up the skillet you could have cooked the whole thing. Leave the casing on. And I leave it on for Spaghetti to. Otherwise it just falls apart and I like chunks.
