Chicken Cigar Wraps with Paprika Sauce

INGREDIENTS:
* 1 pound ground chicken
* 2 shallots, chopped
* 2 teaspoons Marsala wine
* 1 tablespoon paprika
* 4 teaspoons ground cumin
* 1 teaspoon garlic powder
* 2 teaspoons red pepper flakes
* 1 (16 ounce) package frozen phyllo dough, thawed
* 2 tablespoons finely chopped fresh parsley
* 1/2 cup butter, melted

* 1/4 cup chicken broth
* 1/4 cup heavy cream
* 3/4 cup sour cream
* 2 tablespoons paprika
* 1/2 teaspoon salt
* 1/4 teaspoon cayenne pepper
DIRECTIONS:
1. Preheat the oven to 425 degrees F (220 degrees C).
2. In a medium bowl, mix together the ground chicken, shallots, wine, paprika, cumin, garlic powder, and red pepper flakes.
3. Lay out one phyllo sheet on a clean surface, and brush with a light layer of melted butter. Place another sheet on top. Form a 1/2 inch thick strip of the chicken mixture along the long side of the sheets of dough. Roll up like a long cigar, dabbing the end of the dough with a little butter to seal. Cut into 3 inch sections to make cigars. You should get 3 cigars per roll. Place the cigars in a baking dish, and repeat the process with the remaining dough and filling.
4. Bake for 18 minutes in the preheated oven, or until the rolls are deep golden brown and crispy.
5. While the cigars are baking, whisk together the cream, sour cream, paprika, salt, and cayenne pepper in a small saucepan over medium heat. Cook and stir just until the sauce is hot. Do not boil. Remove from heat and serve as a dipping sauce for the cigars.
Chicken Bolognese With Penne Pasta
2 tablespoons olive oil
1 pound ground chicken
1/2 cup finely chopped red onion
4 cloves garlic, minced
1/2 cup finely chopped carrots
1/2 cup finely chopped celery
1 tablespoon thyme leaves
Pinch chili flakes
Salt and freshly ground black pepper
1/2 cup dry white wine
2 cups tomato sauce
1/2 cup tomato juice
Salt and freshly ground black pepper
1/2 cup grated Parmesan, plus more for garnish
1/4 cup chopped fresh parsley leaves
1 pound penne pasta
Heat a large saute pan over high heat. Add the olive oil and heat. When the oil is hot, add the ground chicken and cook until well browned, stirring occasionally, about 8 minutes. Add the onion, garlic, carrots, celery, thyme, and chili flakes and cook until the vegetables are softened, about 5 to 8 minutes. Carefully deglaze the pan with the white wine, scraping the bottom of the pan with a wooden spoon. Reduce until the white wine is almost completely evaporated.
Add the tomato sauce and juice and simmer until a thick sauce consistency, about 20 minutes. Season, to taste, with salt and pepper.
Cook the penne in boiling, salted water until al dente. Drain the pasta and set aside. Add a few tablespoons of the pasta cooking water to the sauce. Add the drained pasta to the sauce along with the Parmesan and toss well. Serve in a large bowl garnished with parsley leaves.
Pacific Rim Chicken Burgers With Ginger Mayonaise
1 1/4 pounds ground chicken
2/3 cup panko bread crumbs
1 egg, lightly beaten
2 green onions, thinly sliced
3 tablespoons chopped cilantro leaves, plus extra for garnish
1 clove garlic, minced
1 teaspoon Asian hot chili sauce
1 teaspoon salt
1/2 cup bottled teriyaki glaze
4 teaspoons honey
1 tablespoon vegetable oil, plus extra for hands
4 sesame buns, split and toasted
4 leaves red lettuce
1 cucumber, peeled, seeded, halved, and thinly sliced lengthwise
Ginger Mayonnaise, recipe follows
In a large bowl, mix together the chicken, panko, egg, green onions, chopped cilantro, garlic, chili sauce, and salt. With oiled hands, form mixture into 4 patties. In a small bowl, mix together the teriyaki glaze and honey.
Heat oil in a large non-stick frying pan over medium-high heat. Add chicken patties and cook on both sides, brushing each side with the teriyaki-honey mixture, about 10 minutes, or until fully cooked through. Place burgers on toasted buns and top with lettuce, cucumber, and Ginger Mayonnaise. Garnish with cilantro sprigs and cucumber slices.
Ginger Mayonnaise:
1/2 cup mayonnaise
2 teaspoons sweet pickle relish
2 teaspoons minced fresh ginger
2 teaspoons lime juice
1 clove garlic, minced
1/4 teaspoon salt
In a small bowl, mix together all ingredients. Refrigerate until ready to use.

You can use the ground meat as a substitute for any thing that calls for meat in the same form,ground. Do chicken tacos.. Stuffed peppers, sloppy Joe's, burgers, tocitos enchiladas,ground chicken helper, chicken chili, a casserole with bread crumbs mushroom soup veggies and the chicken. chicken lasagna, spaghetti and chicken meat balls... so on and so an... Good luck!!

You can use ground chicken in place of ground beef for any recipe that calls for ground beef.
GROUND CHICKEN CHILI
1 1/2 lbs. ground chicken
2 (28 oz.) cans chopped tomatoes
1 (28 oz.) can lightly seasoned chili beans
2 pkgs. chili seasoning mix
1. Brown ground chicken; drain off any liquids.
2. Add tomatoes.
3. Add beans.
4. Add chili seasoning. Blend everything together. Bring to a boil; reduce heat. Simmer to combine flavors.

Chicken can be substituted in most beef recipes. I like casseroles. Take the ground chicken and fry it up with celery, onions, garlic, salt and pepper. Cook some minute rice. Place the cooked minute rice in a 9X11 inch glass baking dish. Add the cooked chicken on top. Open Camp bells cream of chicken, cream of mushroom, or cream of celery soup (2 cans) your choice or mix and match, pour over the top. Mix up stove top chicken stuffing add over the top. Cover with Aluminum foil Bake 350 degrees for 30-45 minutes depending on your oven.

Well - there goes my first thought lol But I use chicken in my spaghetti sauce instead of hamburger or ground round - have for years. Same recipe - just substitute the chicken for the beef.

A really quick and easy way to use that chicken up is just cook it with an envelope of taco seasoning. You can make tacos or put it on buns for sandwiches.

Hi. I've put cooked ground chicken in pasta salad, in fettucine alfredo and even potato salad. Its great on ceasar salad as well.
