I need a great recipe for chicken salad. But im ino fruit and nut chicken salad. Thanx

The whole trick is to start not with a boiled chicken but with a well spiced grilled one. That way each chicken piece in the salad has a memorable taste.

I take a boneless chicken breast and rub on a spicy mixture (like cayenne pepper, cumin, and curry) or whatever flavoring you usually barbecue with. Then grill that until it is done (but not dried out). Then cut it into bite size pieces. Put it in a bowl with some finely chopped onions or scallions. Mix in enough mayo to suit your taste. Let it sit covered in the fridge till chilled through. When you serve that it will be worlds ahead of the usual chicken salad - much more like restaurant quality.

BBQ Southwestern Chicken Salad:

8 cups shredded lettuce
1/2 cup canned black beans, rinsed and drained
1/2 cup canned corn, drained
1/2 cup light ranch dressing
2 cups chopped cooked, boneless, skinless chicken breast
1/3 cup bottled BBQ sauce
2 cups thin jicama strips or carrots

Prep time: 10 minutes
Cooking time: about 3 minutes

1. Put lettuce, black beans, corn, and ranch dressing in a large serving bowl and toss.

2. In a small mixing bowl, stir together the chicken pieces and the BBQ sauce.

3. Serve salads individually, with about 2 cups of the lettuce mixture, topped with 1/2 cup of the chicken mixture and 1/2 cup of the jicama strips.

Yield: 4 servings

San Antonio Chicken Salad

Makes 4 servings

Ingredients:

2 large whole chicken breasts, split, boned and skinned
1/2 cup salsa
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup sour cream
2 tablespoons mayonnaise
1 ripe avocado
1 cup sliced celery
Bibb or leaf lettuce leaves
4 crisply cooked bacon slices, crumbled

Preparation:

Cut chicken into 1/2 inch cubes. Combine salsa, cumin and salt in 10-inch skillet. Cook chicken in salsa mixture, stirring frequently, until cooked through, about 4 minutes. Transfer contents of skillet to mixing bowl; cover and chill thoroughly.

To serve, combine chicken mixture, sour cream and mayonnaise. Mix well. Peel, seed and coarsely chop avocado. Add avocado and celery to chicken mixture. Mix lightly. Spoon onto lettuce-lined salad plates; sprinkle with bacon. Serve with additional salsa on the side.

GREAT GRANDMA'S CHICKEN SALAD

3 c. cooked, diced chicken
1 c. diced celery (2 1/2 stalks)
1 c. pineapple chunks
1 c. mandarin orange sections
1 pkg. frozen peas
2 tbsp. pineapple juice
2 tbsp. vinegar
1 tsp. sugar
Dash salt
1/2 c. mayonnaise
Dash pickle relish
Dash mustard

Mix chicken, celery, pineapple, orange, peas, juice, vinegar, sugar, salt. Let marinate overnight. Drain, drain, drain. Add mayonnaise, relish, mustard. Serve within 1 hour.

get some salad, you could fry the chicken, broil it, barbecue it, etc. and cut it up into small pieces and mix it up w/ the salad and add your favorite dressing onto it

fire up thegrill..........grill a couple chicken breast....... cool chop up.... mix chicken with fresh pineapple cut in cubes can of drained mangerine oranges, bag of walnut meat. rib of celery chopped moisten with cool whip serveonsalad greens
