here's my recipe
2 lbs ground beef
1 pckg stovetop chicken stuffing
1 cup water
2 beaten eggs
1/2 cup kraft BBQ sauce

combine stuffing, eggs, meat, water and 1/4 sauce in large bowl. shape into oval loaf in large baking pan.cover with rest of BBQ sauce.
bake for an hour at 450 degrees.
anything i can add to it to make it better? seems too plain...

Spanish Meatloaf
Serves 6

1-1/2 lb Ground Beef, lean
3 Tbsp Brown Gravy Mix
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)

Instructions:
Preheat the oven to 350ºF

In a large bowl add the brown gravy mix, diced green chili peppers, and the diced tomatoes; mix until well combined. Add the ground beef and BBQ sauce and mix thoroughly until well combined.

Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal. Invert loaf pan onto a broiler pan to allow any fat to drain off while cooking. Bake for 45 minutes.

Remove loaf pan and slice. Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

This is the recipe I use, it is the best meatloaf I have ever made. Try adding bacon to yours, that kicks it up

2 pounds ground beef
2 1/2 cups crushed butter-flavored crackers
1 small onion, chopped
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
2 slices bacon

1 cup ketchup
2 tablespoons vinegar
3/4 teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
1/2 cup brown sugar

DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

When I make meatloaf, I add 2 eggs, stale bread pieces, minced onions, minced celery, shredded carrot, salt, pepper,about 2-3 tbsp of tomato paste. Then I spread Ketchup on top and bake. The ketchup gives it a nice sweet taste. I would omit the B.B.Q sauce for something else. Hot sauce if you like it spicy... worchestershire sauce has a great taste. The stuffing you use sounds very tasty. I'm sure you will enjoy many of the recipes the people gave you. I just might try some myself :-)

Here's mine. 2lbs ground beef
1/2 cup bread crumbs seasoned
l package of dry onion soup mix
1/4 cup of shredded green pepper
1/4 cup shredded carrot
1/4 cup Parmasian cheese
two eggs
l tsp milk
salt, pepper to taste
1/2 tsp garlic powder
1/2 tsp. parsley
1/2 tsp, oregano


Mix well in the bowel and shape into a loaf. On the top of the loaf spread ketchup and sprinkle top of loaf with chopped onion. Bake until done.

Holy cow Lola, are ya sure ya want to bake it at 450 ? and for an hour ? that sounds a little too hot, maybe 350 for about an hour and 15 min. And I always make my 'can't get enough' meatloaf with a cup of applesauce mixed up in it with italian style bread crumbs too, (add a little more crumbs than usual if you use the applesauce, the cinnamon kind is fantastic, you won't be sorry) and put the bbq sauce on top instead of in it if thats what you usually do. (but i use ketchup on top of mine)

About a 1/4 cup Wishister (I know I didn't spell that right!) Sauce, about 1/4 cup milk (makes it brown better). Personally, I like Ketchup better than BBQ sauce. I have never tried stovetop in meatloaf, just a couple slices of bread torn up in little pieces.

I would substitute the Stove Top Stuffing for Itallian bread crumbs, add some Parmesean cheese and substitute the BBQ sauce for pizza sauce. Oh what the heck, make balls instead of a loaf and serve on sub buns and sprinkle with mozzerella cheese. Voila! Meatball subs!!

Sorry, but that sounds gross. Use the ground beef, some bread crumbs or squooshed wet bread, eggs, bbq sauce or ketchup, seasonings like chili powder, garlic powder, salt and pepper, dill - I sometimes add oats and green pepper, and always chopped onion. I really don't understand why you would add the stovetop stuffing mix!

A bit of marjoram, oregano, Olive Oil, Basil, thyme, dill weed. Leave out the Chicken Stuffing, becuase its full of chemicals. Use a few tablespoons of TVP ( vegetable protein) available at a health food store, and some high quality breadcrumbs, some raisins, a little maple syrup, soyt sauce.

Fab!!!
